During the Ottoman empire there are loads of Greek Muslims in Greece especially Athens. But after the Greek war of independent, the Greek Government declared that any Muslim in Greece no matter what their ethnicity is will be call a TURK and must get out of Greece and go to Türkiye. So if you go to Türkiye today A LOT OF TURKS HAVE GREEK DNA. Some of them even have pure Greek blood the only different is that they are Muslims. Many Muslim in northern Anatolia are actually Greek, some old people still speak Greek at home over there.

Even as late as 16th century, wrong ideas about Islam is still prevalent in Renaissance Italy, Spain and other European kingdoms. Even the most rudimentary belief about not worshiping prophet Muhammad sallahu alayhi as-salam, not rejecting the miraculous birth of Maryam alayhi as-salam, not worshipping idols, et al-general populace of Christendom still thinks that we hold onto all the mentioned beliefs. Once that barrier breaks and they get the correct information about Islam, most will convert especially so when Islamic kingdoms are the dominant force during that period. There's also many cases of renegades in piracy context which is equally as fascinating.

You are only required to change the name if it’s offensive or just plain weird or devilish or has an evil meaning. These days, names are very generalistic and do not fall into this category.

Many Byzantine commanders, governors also joined early Ottomans in 14th century (1300s). Most converted to Islam. Like Mikahiloglu, Evrenosoglu…etc. They gathered around warlord Osman. They became Ottoman commanders.
Some historians (like Gibbons) even claim early Ottomans were a Turkish- Greek-Serbian mix.
