Just from looks alone, I had an idea that could possibly improve the sandwich : PICKLED jalapeños. The mix of sour and spicy on the savory sandwich sounds like it could be a good combo.
I'm pretty sure the jalapenos are pickled. Most restaurants use pickled peppers for the shelf life
