  • This sexy kakanin has your name on it, so try this recipe today! 😏 Day 2 of making your favorite kakanin with Chef Martin and today we made Bibingkang Malagkit. 👨🏻‍🍳 Imagine biting into this classic dessert that pairs oh so well with hot chocolate or coffee in the morning (or any time of the day, actually!).
    Serving this on a banana leaf not only makes it look pretty but it also adds that hint of flavor that we all love when eating our national favorite type of dessert (according to us). 😉 Which kakanin are you excited to see next? 💋
    BIBINGKANG MALAGKIT
    Ingredients:
    2-½ cups coconut milk
    1-½ cups glutinous rice, washed and soaked in water for 2 hours
    1 cup brown sugar
    ½ tsp salt
    banana leaves (cleaned and passed through open flame)
    Topping:
    1 cup coconut cream
    ½ cup brown sugar
    ¼ tsp salt
    Procedure:
    1. In a pot, combine coconut milk and rice. Bring to a boil covered and simmer over low heat for 8-12 minutes or until rice is fully-cooked. Fold in sugar and salt. Gently mixed over low heat until sugar is fully melted.
    2. Make the topping by caramelizing the sugar until dark brown in color. Mix in coconut cream and salt. Simmer until thick.
    3. Place the rice onto a heat proof container lined with banana leaves and pour coconut sauce on top. Bake for 20 minutes or until the top is caramelized. Makes 4 servings.

    I’m so glad you featured this. It’s very popular in Bulacan. But in the US it’s not easy to find. I’ve been experimenting with different recipes and techniques but haven’t mastered the topping yet. Where can I get a recipe for the topping? Thanks!

    Am super confused rn haha! i thought this was “Kalamay”? at lease as per modern day street vendors though am aware that Kalamay’s could be the more accurate one like sweeter and stickier version i cant remember exactly how it was i wish i could describe so sorry. so many different variants like “Kalamay Lansong”. One thing’s for sure i know “Bibingka” more as the grilled one in banana leaves with cheese or salted egg? 😅
