This was when they were still tinkering with the formula and didn't know exactly what would make MCU movies 'work', plus Branagh is quite a serious director so the stuff in Asgard is played for sincerity. The double-whammy of Favreau and Whedon (plus Thor 2 not being received so well) made them put far more emphasis on the comedy/slapstick side of things, which is now why the Thor movies are mostly just Chris Hemsworth doing Ghostbusters 2016-style improv in front of a greenscreen.

Odin says 'I wanted only to protect you from the truth' implying that being a Frost Giant is a terrible thing he had to 'protect' Loki from knowing. He could even fight with Thor. however, as time passed, Loki's fighting abilities were weakened and he was in a position to draw a knife on Thanos in Infinity War. Loki and the knive in Infinity war was... complicated, I mean, what else could he do? Thor with his unlimited power couldn't beat Thanos, neither could Heimdall nor Hulk, and he was in their level too so trying to fight Thanos in the same way would had ended bad. And about the Loki show you are right, but to give credit to that episode, he kicked a guard off the train with a single kick, and they needed to trained guards to throw him out of the train
