Make caramel in a sauce pan first then put the caramel mixture into the bottom on your cake pan and then lay the fruit on top of that. This way you are guaranteed a brown crispy and moist top rather than a sweet soggy one. I tried this yesterday and it worked perfectly!

Very easy, fast, delicious, and sweet enough that one slice satisfied, ha ha. Summer is not orange season so only naval oranges were available. It's a keeper recipe.

I just made this and it was fantastic. It is surprising the payoff for a relatively easy cake to make. I have 2 thoughts:
    1. Next time I make it I'm going to try browning the butter. I'm not sure how/if it will impact the caramel, but I think it might add even more depth of flavor.
    2. The sugar and butter in the bottom of the pan are called "caramel," but it's more of just a sugar crust. I don't think there's enough heat and time to actually caramelize the sugar. I'm wondering if creating the caramel separately, like with a tart tatin, would help that.
Some fun tweaks to consider, but this cake is a stunner - visually and deliciously - made exactly according to the recipe.

If anyone makes this, don't be afraid if the orange segments fall apart, you want that. Now you can put them back together mixed up or in a pattern to spread the color around the cake however you want.

I did a slight modification to this cake. Make sure the butter used for the caramel it's clarified. Clarified not browed. Melted butter has too much moisture in it. Between the moisture of the oranges and moisture of the butter it makes the caramel a little too wet.

I made this cake. It was very good! I sliced the orange with the skin on and then cut the skin from the inside with a pairing knife. It was easier than peeling each orange. I did find it difficult to eat with a fork because the orange wouldn't break apart. You almost have to eat it with a knife and fork
