No-Bake Matcha White Chocolate Cheesecake | Gluten Free Vegan Desserts

    Delicious No-Bake Vegan Matcha White Chocolate Cheesecake!
    If you love cheesecake as much as us, you must try this No-bake Vegan Matcha White Chocolate Cheesecake.
    Best of all no baking is required :)
    Ingredients (6-inch)
    *1cup=240ml, 1Tbsp=15ml
    *No Substitution Suggestions Unless Specified.
    CRUST
    • ½ cup GF oats*
    • ¼ cup sunflower seeds*
    • 1/3 cup almonds*
    • 3-4 Medjool dates, pitted (50-60g)
    • Pinch sea salt
    *sub your choice of nuts/seeds
    MATCHA CHEESECAKE
    • 1.5 cups raw cashews, soaked overnight
    • 1 cup coconut cream, scoopable (sub full-fat coconut milk)
    • 2-3 Tbsp maple syrup (adjust to taste)
    • 1 Tbsp matcha powder (adjust to taste)
    • Pinch sea salt
    • 1 small lemon, juiced
    • ¾ cup vegan white chocolate (120g)
    WHITE CHOCOLATE
    • ¾ cup raw cashews, soaked overnight
    • 1/3 cup coconut cream, scoopable (sub full-fat coconut milk)
    • Pinch seas salt
    • 2 tsp fresh lemon juice
    • 1/3 cup vegan white chocolate (80g)
    • 1-2 Tbsp maple syrup (if needed)
    *1 cup = 240ml (16 Tbsp)
    Instructions
    1. CRUST: Add oats, seeds, and almonds into a food processor with salt and process until it's the texture of coarse sand. Add the dates and process until well combined.
    2. Pour the crust mixture into the springform pan and use your fingers to flatten it.
    3. Place in the freezer (or fridge) while making the cheesecake.
    4. MATCHA CHEESECAKE: Add all of the ingredients except white chocolate to a blender and blend until smooth.
    5. Melt the white chocolate in a bain-marie. Pour the melted chocolate into the blender and blend until completely combined.
    6. Pour the cheesecake onto the crust and gently tap to flatten and remove any air bubbles. Place in the freezer for at least 1 hour before adding the next layer.
    7. WHITE CHOCOLATE: Add all of the ingredients except white chocolate to a blender and blend until smooth.
    8. Pour the melted chocolate into the blender and blend until completely combined.
    9. Pour onto the matcha cheesecake and place in the fridge to set for at least 4 hours or overnight.
    10. Store the cake in the fridge for about 5 days, or in the freezer for about a month.

    I've made this yesterday and just tried it, it's delicious! The texture of the cheesecake part is more akin to a mousse, you'd definitely need to put it in the freezer if you want a more dense texture. Can't speak for the base as I did a more traditional biscuit base as nuts+dates plus all the cashews in the cheesecake would be too oily for my stomach. Thank you for this recipe!

    I made this cake yesterday but the crust came out too dry and didn’t set well in the freezer. I think it was the oats. I didn’t have enough rolled oats and added a little bit of steel cut. Other than that the flavor and texture of the rest was delicious! Thank you.
