Fermented Eider egg

  • Harvested back in early June, these eggs were collected on an island close to Siorapaluk in northern Greenland. They’re then kept in a box away from sunlight and left for a few months. When they reach the ‘right’ strength they’re frozen. They smell like rotten eggs but once you’ve wrestled them down your throat they taste er, like rotten eggs. But in a not-too-bad way - again, they have a cheeseboardy taste. Close your eyes and they’d be fab on a cracker with chutney...

      Is amazing how much of an animal is used up here. Puts most other places to shame
