I am from Nigeria. The egusi soup was for the pounded yam (not fufu which is made from pounded cassava).
The red sauce made from tomatoes/red pepper, habanero pepper and onion blended sauce could be topped on the egunsi and jollof rice for additional flavor. Usually the red sauce is eaten with white boiled rice and a lot of boiled plain/bland food to give it flavor.
    Thanks for promoting Nigerian Food.

@Madison Taylor I'm really glad you asked!! I should warn you though, a majority of Nigerian dishes are spicy lol. You should definitely start off with some jollof rice, suya, plaintain, puff puff, meat pie, moi moi...The list continues really, but I think that's a good starter pack meal. If you want to try the more cultural dishes, I would recommend trying Egusi or Okra soup. You should eat these soups with fufu (which is made from cassava or sometimes even pounded yam). Oh and don't mix any kind of soup with jollof rice :)

If you ever get FUFU & EGUSI again, eat the fufu w/ the egusi. The red stew is beef stew (or chicken). You can also order it w/ assorted meats (depending on the restaurant). If you are adventurous, try beef suya, porridge, yams w/ beef stew (or assorted meats), pepper soup (again depending on the restaurant, they may have fish, chicken, beef, assorted meats--advise to get w/ assorted meats), and puff puff. There are more I can advise to try. If you would like to know, don't hesitate to ask. 😘

Tomatoes and peppers blend very well. Buy enough
After blending, add tomato sauce and add oil after like..... 10 minutes add the blended tomatoes and then after 10 minutes add onions (any type) and add you Maggie And curry.
I don't know the rest but I hope that this helps ❤️💕🇳🇬
