WOW! If you love cooking on the @BlackstoneGriddles or have a flat top grill, you don't want to miss this collab between @cheftimclowers @TheFlatTopKing and me! Join us in Tim Clowers backyard for some informal cooking fun with some great griddle tips from tim and the flattop king. These guys have years of culinary experience from all over the world and it was so fun learning this recipe and a few great tips along the way. If you don't have a grill you can still make these on your favorite cast iron, or stainless steel pans!
Chef Tim has over 20 years of experience in the restaurant and catering industry and shares a wide range of recipes here on youtube as well.
TheFlattop King spent a career cooking in the U.S. Navy and has been to some great culinary schools as well. He has also been cooking on youtube for quite some time where he shares lots of sage griddle advice, recipes and tips.
Cilantro lime mayo Recipe:
1/3 Bunch Cilantro
2 Limes Juiced
1 Avocado
1 Tsp El Jefe Seasoning (Link in Chef Tim profile)
3/4 Cup Mayo
3/4 Cup Sour Cream.
Burger recipe:
Roast or smoke 4-6 jalapeños and 1 poblano pepper
Cut the top off a whole clove of garlic, cover with olive oil, wrap in tinfoil and cover in olive oil and roast or smoke until tender. Remove seeds from peppers and puree. (You can add a tbsp of water or 1 egg if needed) mix gently with 1.5 lbs of ground beef and loosely pack into balls around 2.5-3oz each.
Toast buns on heated griddle with butter.
Place meat balls on hot griddle or pan, (optional, top with thinly sliced onion) smash to around 3/8” and season (we used @TheFlatTopKing seasoning, Smash That, available from his website)
Leave undisturbed until cooked around 70% through (around 90-120 seconds) then flip, place cheese on burger and leave until cheese begins to melt.
Stack and place on bun, top with the seasoned mayo sauce and subscribe to each of our channels 😂

I've never had chick fil a coleslaw! The locations in Southern California doesn't carry it!
None ofc them carry it anymore sadly except maybe a couple Georgia locations

@@Thebateskitchen LOL p I've heard said that either it tastes like soap to some or it tastes like a very bright pleasant herbal taste to others I guess me and Whitney just have the same taste buds because no matter what I can't eat this stuff remind you I love herbs I love greens I was the kid that loves spinach okay even can spinach I still do to this day and I'm 68 years old I was the 7 year old that loves canned spinach it's not that I don't like vegetables or greens on them I just can't stand cilantro but I heard tell you can replace salon slanter with parsley I love fresh parsley song don't you think you can do the recipe just with parsley if you didn't like cilantro just asking? I wonder if the stainless has the aluminum core like the pans do. I've had such bad luck with stainless cookware, it always ends up putting on me and then I worry about those other metals leaching out. It kills me having to toss those after about 5 years, I would die if I had to toss a complete flat top!! Those burgers definitely look amazing!! We need smell o vision!
I’m not sure is that is actually Tim’s! There are lots of ways to avoid stainless steel pitting though!

Your recipes are amazing! Even as a experienced cook I have learned a ton! A few things I would like to share are about food safety and quicker prep. Wash your hands after touching the raw meat before touching the salt container. It prevents cross contamination. I have been cooking for years and now use disposable gloves for raw meat so I can prevent contamination and can move faster! I also have a garlic roller to get the skin off and automatic pepper grinder. They both save a ton of time.
I do wash after raw meat, but we don’t always include that. Also with the salt container, I just put salt in it for whatever I’m cooking that day, and then dump excess and wash it out when finished. We try to cut as seamlessly as possible, but because we are using tripods, there’s not a lot of cleanup and washing hands on camera!
@@Thebateskitchen I can't even imagine the extra steps needed to film. Shopping, prep, cooking and clean up are already so much work. Great job making it look so professional and on the collaborations you have fostered.
