Matt Moran is the well know Australian chef, restauranteur, author and television personality, who owns numerous award winning restaurants and bars throughout Australia.
Spanner Crab Spaghetti
Spanner crab spaghetti, tomato, chilli & garlic Serves 4
Preparation time: 10mins
Cooking time: 15mins
Ingredients
2 large roma tomatoes
200g Spaghetti
75 ml extra virgin olive oil
2 cloves garlic, peeled and finely chopped
50g leek, chopped
1 long red chilli, finely chopped
1 tin whole peeled tomatoes
400g cooked Spanner crab meat
10 leaves basil, torn
salt and pepper
100g rocket
Method
Cut a cross at the bottom of the Roma tomatoes and blanch them in boiling water, allow to cool then peel the skin and dice up the tomatoes.
For the pasta, bring a pot of salted water to the boil before adding in your spaghetti, cook for 9 minutes until al dente.
While the pasta is cooking heat the olive oil in a large nonstick pan over a high heat, add the chopped garlic, leek and chili, cook for 2-3 mins until fragrant, add in the Roma tomatoes and cook until they start to break down, then add in your tin tomatoes and cook for 5 minutes. Add the crab meat and basil and stir through. Season to taste.
Drain the pasta and place in a large serving bowl, mix in the rocket and olive oil and top with the sauce and serve.
