Let your espresso cool beforehand, either by doing it earlier in the day or by giving it an ‘ice bath’; otherwise you’ll wind up with excessive dilution😢

Muddling the mint doesn’t make it bitter… unless you have old mint that’s turning dark. Get some fresh mint and don’t be lazy and muddle it. Then filter it to remove the little pieces (unless you like it) and finish the drink and garnish. I make the best Mojito! I need to make a video, but I don’t know if I want to share exactly how I do it all lol
Is demerrera sugar ok for a mojito?
In America we use: Demerara (.5 oz) lime juice (.5 oz), 8 plucked mint, and 2 oz lime, shaken served with dirty ice.

Everything is right on in this recipe, but that Orange Curacao looked more like Triple Sec. Hats off for using crushed ice, it makes a difference. BTW, I live in Hawaii, I have been a Director of F&B for 24 years, I drink Mai Tai that I make every day, and I even make my own Orgeat, so I obviously know what I am talking about.
Sorry to say it, but if I ask for a Margarita in a bar and I get one like the that, I will immediately return it. 1. You need to add an orange based liquor (1 oz of Triple sec, Curacao or cointreau), 2. Always use a Margaita Glass (it´s part of the fun and the tradition. The bigger and colorful, the better) 3. Always chill the glass in the freezer long time before serving. 4 The rim of the glass needs to have lemon with salt. 5. No ice cubes. No means to offense but your Margarita looks boring and to the eye. Doesn´t even look like a Margarita. By the way Jimador is not consider a good quality Tequila. It´s a low of the shelf Tequila, just Ok for cocktails.
I agree with everything you wrote, except for the triple sec. Personally I think it's better if you use ageve syrup. ;) Unfortunately it's rarely made this way
@@leadingastray no matter what kind of syrup you use, you will always add an orange based liquor to a Margarita. Why? Because it"s a Dasy formula. It means you need a base spirit , syrup, lemon and a liquor.
There is no recipe for margarita tequila, there are many varieties, finally it depends on personal taste, the version you mention is the commercial one, which in no case is the original.

Having been to some of the best and most famous bars in Havana I can assure you they use Havana Club never Bacardi, icecubes in stead of crushed ice, leave the whole twig intact in stead of using plucked leaves and they add a couple of drops of Angostura.
You can’t get Havana club in USA. Bacardi used to be a Cuban company but they left.

Do most bars carry El Jimador Blanco?
"Most bars"? Impossible to say. There are many good tequilas out there. Any reputable bar should have a couple of quality options. Mostly make sure it's 100% agave and you should be fine. Personally, I prefer a reposado. They're richer in flavor and stand up better to the lime and other ingredients.

Try crushing lime suger and mint together - add rum and stir again - different effect. Try it.
A good quality blanco? El Jimador is not it!
