Chickpea Salad I never get tired of eating!

Everyone will love this chickpea salad!
This chickpea salad is so good, you'll want to make it all the time! The creamy dressing pairs beautifully with the salad, making it light yet filling. This chickpea salad is great for meal prep and holds well in a lunch box. Be sure to keep the dressing separately and mix it when you are about to serve.
This chickpea salad is vegan friendly and high in protein. It can be enjoyed on its own or paired with grilled meat.
NGREDIENTS
1 can (250g) chickpeas (cooked, drained and cleaned)
8-10 lettuce leaves
1 red bell pepper (small)
1 yellow bell pepper (small)
1 english cucumber (medium)
1 carrot (small)
1/2 cup pomegranate
SALAD DRESSING
1/2 cup (75g) cashew nuts (or 2 tbsp cashew butter)
2 tbsp olive oil
1-2 garlic cloves
1/2 lemon
1/4 cup water
salt and pepper (to taste)

I somewhat messed up my last batch of Asian Chicken Noodle soup (but worked with it until it was acceptable). About to try again using this recipe .Thankfully,I have all the ingredients (including star anise).
Just finished it.I did add mushrooms and carrot (in a vegetable blend), used all of the spices. Turned out good! The anise added flavor that I’ll have to get used to but it’s interesting (but not something I’ll be using often). Quick and easy.

I am definitely going to make this. I love that you made a cashew dressing! I usually don't like salads because I don't like bottled dressings, so I generally only use lemon slices with salt and pepper unless I make my own raspberry vinigrette or poppyseed dressing. This looks phenomenal!
