I recently saw @MerleONeal making this vegan mozzarella and I KNEW I had to try it. This is a recipe from Ellie Phoebe Brown over at kindacademy.uk and I'll tell you it was amazing!!! Really simple and delicious, but I wanted to take it a step further. Can we get more stretch a little more tang... So I gave it a try to make the simplest yet crazy good stretchy vegan mozzarella cheese!

Watching two vegans who probably tasted meat over a decade ago be like: “yup this definitely tastes like bacon” is not really a reference point lol
lol yeah it wouldn't be. Neither of us are vegan. Not saying I've had bacon recently but it hasn't been a decade. That being said do you commonly forget what things taste like? I havn't had one of my grandmothers pies in over a decade and I can tell you right now if someone nailed one of her recipes I would know it. If you are forgetting what things taste like go see a doctor.
Looks interesting, but the measurements are confusing me. The cup in particular. What kind of cup? Espresso-cup? Teacup? Coffee cup? Mug? Or is that another of those weird arbitrary measurements Americans are so fond of? Like stone, ounce, yard, and whatnot?
Cup is standard measurement in the USA. Stone is not btw. Stone is used in the UK and Ireland. Is this the first recipe you’ve seen from the US that you are so confused by the term Cup? Seems odd to me.

Im susbcribed to this channel for a while now... I'm not a vegan. nor planning to go vegan, but I'm not against plant based alternatives, I do buy marganine instead of butter, they kinda-taste de same, but is a lot cheaper, I wouldn't mind to eat a vegan steak or whatever, from time to time, if it wasn't THAT pricey or the taste was good, or pleasurable, I've tried some vegan options because of course I would, but 98% of the time I'm dissapointed, I don't think the future is vegan, but I think vegan food can be a big part of it, TBH, I'm just here, to increments my belifs in that matter

Dude I am such a DOG for ginger everything. You have given me a new project! To be clear, a ginger “extract” is clarified and treated for long storage. This is fresh and I expect that it’s flavor punches you in the face.
Arrowroot and tapioca flour are the same. Different names depending what part of the world it’s being used.
They are fairly interchangeable but not the same. Arrowroot starch comes from the Maranta arundinacea plant while tapioca is from the cassava root. Arrowroot will actually keep a firmer gel and maintain its stretch at many temperatures over tapioca which is why I added it here.

Yeah you had me till Vegan Butter. Something that happens when you wash mushrooms before selling at the store is contamination. You don't wash mushrooms before sale. It makes the mushroom rot. Also, that is not dirt. That's sterile medium that mushroom growers use to grow mushrooms. Usually it's made of pasteurized coffee grounds, woodchips, straw or grain. Notice that it doesn't stink and smells just like the mushrooms. If it stank, that would be a sign of contamination. You can wash them before you cook them. That's the best time to wash them.

I love how simple the general idea is BUT...tapioca is so so sticky when heated! Wasn't it gluing your mouth like most vegan cheeses do? I can totally understand what and why you changed to make your own version and I am glad it is not as sticky, might be worth getting the ingredients!

SMH In case you are curious The main difference between margarine and plant butter is that while margarine may still contain small amounts of dairy, plant butters are free of any animal products. Sure wish you would market/sell your vegetarian faux meats, etc. Most of the items available in stores are so full of junk/fillers/poisons your products would be a great alternative. I bet many people would love to buy/eat them.
No cows suffer in the making of tofu. So the choice is easy.
The simplest vegetarian cheese I've made regularly is cashews and lemon juice (and maybe some salt) blended with water. I've even put it on pizza. It's not chewy at all. But it's tasty and as simple as it gets.

This recipe is extremely similar to one I saw posted in an fb group years ago, which was the Gentle Chef's mozzarella recipe minus kappa carrageenan for immediate use on pizza specifically. The set version takes just as little time to make, if you don't count leaving it to set.
