Pit Boss Recipes: BBQ Dutch Bearclaw
Pit Boss Recipes: BBQ Dutch Bearclaw (English)
Ingredients
500 g minced beef
1 tbsp bbq rub
2 onions
bbq sauce
salt and pepper
Grill: Pit Boss Pro Series Vertical Wood Pellet Smoker
Satay sauce
150 g peanut butter
2 tbsp mirin
2½ tbsp soy sauce
2 tsp honey
½ tsp garlic powder
80 ml boiling water
Extra requirements
pan
core thermometer
wooden skewers
Steps:
1.Set up the barbecue with an indirect and direct section and heat to 190°C.
2.Season the minced meat with the barbecue rub and form three large firm balls.
3.Coat the balls with a little oil and grill them on the bbq until a core temperature of about 54°C is reached. If necessary, put them on the indirect part if it goes too fast.
4.Cut the onions into thick slices of about 1 cm. Coat them with oil and sprinkle with bbq rub. Grill the onions on the direct part until they are soft and golden brown.
5.Cut the meatballs into four slices and thread them alternately with the onion rings on skewers.
For extra bbq-flavors you can put the meat skewers back on the indirect part of the bbq and coat them with bbq sauce. Let them sit for another 5 minutes and you're done.
7.Meanwhile, prepare the peanut sauce. To do this, mix the ingredients (except the hot water) in a pan. It will now become a porridge. Now mix it with the hot water and, if necessary, put it on the bbq to heat through.
8.Serve the peanut sauce over the bear claw and serve immediately.
9.Enjoy the Dutch bearclaw

He didn't say what temp he ran the smoker at. Without knowing that his instructions are useless.
I bought this model from Walmart and when I brought it home to assemble it, I couldn't. The main reason was because they had packed an extra part in the box and shorted a part. The part was one of the legs to support the propane and charcoal grill which was in one of very first parts to be applied in the beginning of assembly. I called Pit Boss and told them my issue. I was told that part was on back order and I couldn't be told when they could get it to me. That was 5 months ago and I haven't received any calls, email, "snail" mail or ANY kind of response to my problem. If this is how Pit Boss treats their customers then they can keep their product. I'm out the money that I paid for this model an1d only have a not-even-1/8 of a grill to show for it. As much as I see and hear the hype about these grills, they can keep them! I could've spent less revamping my old charcoal grill from Kmart. It lasted 3 years of use, weather and moving and is still worth more than this junk!

I’m having a problem with the temperatures being uneven across the grill. Because of the design, the area right above the pellet area gets way hotter than the rest of the grill.
I think thats the point, its even shown in the diagram with the spirals being more red on the left as they move to a more cool area on the right. My guess would be its similar to charcoal, one hot side and one cooler side
1500 USD in Sweden inc taxes from local distributor, ridiculous if you ask me. U can buy a "normal" barrel charcoal grill for like 100-200 USD... Why would anyone pay 15 times more for this, sure the quality is presumably a lot higher but rly, 15 times more, I doubt it. Pitboss Pro 1150 Wifi owner here.

Just purchased the Memphis ultimate 2.0 thinking it was improved but it doesn’t have a temp gauge for the smoker and you can’t direct smoke into the grills. This must be the cheaper version, anything you could help me understand?
My biggest issue with it is that it does not have a smoker door temp gauge so you have no clue what temp the meat is. it does have a temp sensor but not sure how to use it
What about the temperature probe located on the bottom rear of the unit?
I have a 2021 model. This video was useless. 1. this is the USA. Metric has no use here in measurement. 2. No useable information about the controller. This was just a fluff advertising piece. I get more information from Grill Sergeant, American Smoke, and Gavens Good Eats & BBQ. If you aren't sponsoring them you should be. I started wit a Classic/700, added a Series 5 Copperhead, a Loreado 1000, a series 3 Copperhead, another Series 5 Copperhead after I sold the first one and now the 2021 Pro Series 4. I gave my Series 5 Copperhead to my granddaughter. I still have my series 3 Copperhead. I do like Pit Boss. For the money they are great machines and in the years since I got my first one I have never experienced one single issue. Sometimes however you folks need to get with the program. Your so called "New and Improved Digital PID Controller" is behind, way behind, the competition. RecTec, Camp Chef and (God help us) Treager are the gold standard. I've ordered the new controller for mine so we shall see just how "New and Improved" it really is.

No. Fuels are gas, charcoal and electric.
