So it looks like today july 25 2017 that holy priests are getting hit again with the nerf bat. So this will be our time to show that we can still heal well even if they keep doing this! I think this will open us up to other specs to play now rather than rely on Ray of Hope.     How do u feed the bottomn coals on the side to keep it fed

      They naturally drop down when they burn up smaller than the grate the coals normally sit on. Somtimes if the whole bottom gets filled with ash you kinda have to start over and clean it all out so the air can feed the coals.

    how do you prevent a huge fire so it doesn't rust or peel?

      If s fire starts choke the air down and put some pre soaked wood chips on top of the flames to dampen it.

      @@CookNComedy the side vent allows more are to blow onto the coals and give you more heat. The chimney cover also does the same thing, but allows it the draw or pull the air up. Play with both to get the temperature you are looking for.

    Just picked this up but going mod mine with an electric hotplate (1000w) i have seen it done on home built smokers not sure if 1000w will be hot enough so may need a 1500w Have temp probes to be able to check heat distribution Once i can get 220-250 constant temp will do temp spread

      I think it was 8 hours. Hard to remember though. One thing you can do if you are pressed for time is start of by smoking it. Never really let the smoke let up. Then wrap it in tin foil and finish it in the oven at the higher heat.

    You need to season your smoker like a cast iron pan, coat it all inside and out in any high temp oil every time you use it to help prevent rust. I use spray canola oil because it’s convenient. Also be sure to remove the ashes asap to prevent corrosion. Use small aluminum bake pan like you’re using for a water pan to catch the ashes or use some heavy duty aluminum foil to line the bottom of your charcoal chamber and change it out when cleaning the ashes to prevent moisture from gathering underneath. As for your dampener, remove it from the chamber door and give it a slight bend to cause friction against the chamber wall.

      @@danielleg2616 That would work just fine, but don’t lay the coals directly on the foil because it will just burn through. The foil is more of an easy clean up precaution. I use the 18” wide heavy duty aluminum foil. Reynolds is good, but great value has the same stuff, same sized roll for a buck and a half less. When your grill or smoker cools down and you can safely touch it, empty the ashes and remove the spent aluminum foil. If it’s not horribly burnt or completely covered in grease, check underneath for moisture. If the ashes sit too long in the grill or firebox/ charcoal chamber, they will attract moisture and it actives a chemical reaction that eats away at your grill faster. The grease flare ups suck, but having the bottom of your box collapse in the middle of cooking is soul crushing and dangerous of course. If you’re using it to line the smoke chamber on a smoker, it too can accumulate moisture underneath if it’s cooling down in cooler temperatures. But start lining it in layers from the drip hole end and line it the next layer slightly overlapping towards the firebox. This way the fat and grease runs down it like shingles on a roof if that makes sense. P.s. I used the Copper Silicone Sealant from the same company instead of the red because it is higher temp rated.

    Why red silicone? I used High Temp black paint regularly to maintain the grill looking nice.

      i used red because it was the only available in my area at the time. 🙂 yeah i got some high temp black engine spray paint that works well for the outside.

    thanks for the video, i just got mine in the mail. i noticed the vent for the firebox doesn't have a lock washer on the hinge nut/ screw. i'm guessing if you slap one on; you won't need to use your shovel to hold it open. as of now mine is nice and snug. cheers

    Got one, just a little bigger. Best advice, Use a screen or something Homemade to prevent fire from touching the bottom of your smoker. Secondly when starting your fire leave your smoke box lid open until your second stacking and then until white smoke. Thirdly, season your smoker and cover your smoker. Althrough Char-boil aren't on the high end of grills a few simple mods can make this grill cook with the best, mainly adding bricks or lava rocks and second increasing the stack length.

    Hey couple of things say 1.you got small bolt at the burning chamber door that you can just make it tigh and the door would be perfectly fine. 2. This smoker showing very false temperatures at the top (100f difference) without additional thermometer you will never get a good prepared meat if you don't know the actual temp.

      The char broil is definitely a good start if you don't know if you enjoy smoking meats or not. So they are more entry brand quality. The silicone is to seal anything that can leak smoke/air. It gives you more control over heat and let you smoke the meat better. If you don't silicone it just leaks smoke everywhere instead of going through the chimney pipe and going over your meat.

    Treat it like a cast iron pan and rub some cooking oil on it. That will blacken it up again and prevent rust, also doing that method you won't even need to spray paint it ever again👍

      I would think a small 9-11 pound might work. I raise my own 30-40 pound Turkeys and those would not fit at all.

      If you use it to smoke a turkey it will probably be cold outside as well. You may need to start the turkey in the smoker for about 4-6 hours to get a nice smoke char. Then move it to the oven to finish.

    Thanks for the video, helpful in my first use of this same smoker gifted to me. I tried a whole chicken (3 lbs), expected it to take roughly 4 hours. Problem is I couldn't get the smoker to maintain a temp over 200 degrees, so getting to 165 wasn't happening. Ran out of time and had to finish it on the grill. Turned out great. Any suggestions on temp and raising it would be great!

      The main isssur is just keeping anough coals and wood smoking BUT not on fire. Thats why i use the big wood chips to make a decent heat going and then smother it if it gets on fire with the soaked small chips. Hope that helps. 🔥🔥

      We can use smokers in Canada, during the winter, for sure. I have a pellet grill which holds temp just fine. Offsets you may want thicker gauge steel ones for better heat retention. Such as a yoder. But it would just be more fire management, using the offset smoker.

      There are two models of this. One is bigger and the other smaller. This is the smaller one with no shelf. Your buddy must have the bigger model. 🙂

    I have a char broil charcoal grill and I’m looking to get an offset smoker for it. It’s the American gourmet tabletop grill/offset smoke box. However the dampener plate on the grill does not come off, it doesn’t have any nuts or bolts to remove it. It only has 2 empty holes above and below the dampener plate. So I’m wondering will the dampening hole be big enough for it to get heat and smoke throughout the grill from the smoke box when I attach it? The manual says the smoke box can be attached on my model, I just find it hard to believe you and everyone else’s videos I’ve watched had the whole plate removed while I can’t remove mine.

      You know im not sure. I bought mine as an actual smoker kit. I'm not sure if we have the same model as mine came with all parts needed and all fit together perfectly.

      Have you tried getting your coals good, then putting bigger dry wood chips on? Then if it gets to hot you can put the wet chips on.

      Whats a long time? I can make it work for about 2-3 hrs with a deep coal bed and smoke chips on it. Thats about it.

      Depends on the amount of smokey flavor you want. You can smoke it for a couple hours and finish in the oven if you want.
