SAKE Lees Cake / vegan / sakekasu
Today‘s vegan dish is【SAKE Lees Cake】.
SAKE Lees are produced in the manufacturing process of sake.
The fermented moromi is divided into sake and lees by squeezing. The lees can only be made there. So Sake lees contain 8% alcohol in 100g.
However, in the case of this SAKE Lees cake, it is baked at a high temperature, so no alcohol remains. Therefore, children can eat with confidence.
In fact, lees are recognized for there excellent food functions that enhance beauty and health benefits.
The greatest benefit is to improve the intestinal environment with a rich resistant protein.

      @@vegeandkoji7149 I just made some. Came out delicious, but added 4 tbsp maple syrup, it was really salty. Also the sesame oil is overpowering I used 1/2 of what the recipe called for 🤗

    The soymilk that is sold here doesn't have solid percentage information. It's only has protein percentage. Are those 2 the same thing? If not, do you think homemade soymilk will work?

      Hi. We can't make this ice cream without a high protein percentage in soy milk. Please try with commercially available soy milk once. If it doesn't lather well, try homemade soy milk. Thanks for your comment!

      Exactly! This recipe produces a soft, smooth chocolate. If you like a slightly harder and bitter taste, reduce the maple syrup to make it. Thanks for your comment!

    Great video, loved the detailed explanation on the biochemistry of Sake brewing! It was also interesting to see how Koji is grown for Sake, I just started growing my own Koji for making Miso, Amazake and Shio Koji, so it's interesting to compare to how it is made at a commercial level. It's so cool that you actually visited a Sake brewery, thanks for sharing the insight with us! Would you consider visiting a Miso and/or Shoyu making facility, or even artisanal Miso or Shoyu makers?
