    Thank you for your wonderful video! Do you know whether your hard white is spring or winter? I've been having trouble with my hard white and think it might have pretty low gluten. So I'm going to try to make sure the next bag I buy is spring with a higher gluten content.

      I make 1 loaf at a time for this recipe since only my husband eats it. It will double just fine tho with no modifications. Just expect a slightly faster rise.

    You may want to try the Ankarsrum dough hook for small batches.

    This was really helpful. I just made these. I would have added flour at the beginning there, but instead just kept patient and finally reached a window pane. I will say it took 4 times as long in my Ankarsrum mixer than the 10 minutes in the recipe. I don’t know if there is something I’m doing wrong. I did follow the recipe with weights exactly. I’m really pleased though on how these look. Still waiting for them to cool.

      It does. It’s normal for it to get up to around 115 degrees

      I use whatever I have on hand. I’ve used hard white, einkorn, kamut etc.

    I’ve been making your recipe and I love it. I use an egg version and I don’t reduce the water. Last batch I let the dough rest before the yeast, for 1.5 hrs. I also used hard red, hard white and einkorn berries. It was the best batch ever.

    Can you make small patches like for just 2 people with this machine? Or can you freeze what you don't cook and use later? How is pasta after being frozen and thawed? Thank you for any help!

      Hi. You can certainly make smaller batches. You can also freeze and cook from frozen. No need to thaw.

    Thank you! You are a wonderful teacher and a great communicator. I have from time to time been having “window pane” issues! I think it might be the water. When I make bread next week I will try it with room temp or cold water and see what happens. I love my Nutri Mill Artiste mixer!

    Monique, I am always learning something new from you! I have used my Bosch for 13 years and NEVER knew about using cold water!! My window panes have always been fickle and maybe now I know why! Thank you! Also, I think this might be related a bit. I was told years ago to let my flour cool down after milling, so I have always done that. Is this something you do?

      Hi! I don’t let my flour cool down. I’m always in a hurry with 8 children 😅. I find that the cold water does the trick. I’ll even use ice water sometimes if I’m doing a large batch that I know will get pretty warm.

      I have frozen them before cooking them. They freeze very well. They cook from frozen great as well. I haven’t frozen them after cooking. But I have refrigerated them after cooking and they soften up nicely after being reheated in a pan or microwave.

    Hi, I was just about to try this lovely looking recipe and noticed a small difference in the amount of oil in the video and the written recipe - is it 62 grams or 80 grams? Thanks 😁 * edit - also just noticed a difference in the yeast amounts, 18 grams written, 22 grams in the video

    I have 2 questions. If I was using the yudane method would that make the dough too warm if i used cold water for the remaining water? Also does putting eggs in the dough make the bread taste eggy? I've been making my bread without eggs or lecithin and it seems ok. What is the advantage of using eggs.       The recipe I’m using in this video uses yudane. I did not allow it to cool. I used it immediately after mixing. There’s no egg taste in the bread. Eggs and lecithin make the bread softer and keep it soft for longer. Lecithin especially. Eggs contain lecithin but not in as much quantity as using sunflower lecithin. But some people don’t like the idea of using a processed ingredient.

      No. I put a tray of water on the bottom rack to create steam and removes it half way through baking.

      @@BeccaS1 oh! I do keep the lid on. I’ve never kept the lid off. Yes, it will dry out on top, and I’d imagine it then wouldn’t rise the same.
