Everything A Breakfast Sandwich Should Be | Meal Prep
Everything you could want in a breakfast sandwich…
⚪FULL RECIPE⚪
~ INGREDIENTS ~
BAGELS
- 60 g (½ c) whole wheat flour*
- 260 g (2 c + 3 Tbs) all-purpose flour*
- 20 g (4 tsp) baking powder (I use aluminum-free)
- 6 g (¾ tsp) salt
- 380 g (1 ⅔ c) nonfat Greek yogurt
* If using only all-purpose flour: 320 g (2 ⅔ c) all-purpose
BEST EVERYTHING BAGEL SEASONING
- 6 g (2 tsp) dried minced garlic
- 6 g (2 tsp) sesame seeds
- 6 9 (1 tsp) coarse salt
- 4 g (1 tsp) black sesame seeds
- 2 g (1 tsp) dried minced onion
- 2 g (½ tsp) poppy seeds
SAUSAGE
- 1 lbs (roughly 450 g) 93/7 ground turkey
- 6-9 g (1 tsp) salt
- 2 g (½ Tbs) rubbed sage
- 3 g (1 tsp) white pepper
- pinch of crushed red pepper flakes (optional)
- 28 g (one slice) cheese of choice (after cooking)
EGGS
- 2 scrambled eggs per sandwich
- desired mix-ins (optional)
- pinch of salt (to taste)
~ INSTRUCTIONS ~
- Whisk together bagel dough dry ingredients and mix in yogurt
- Form dough and split into 4 equal parts (~180 g each)
- Shape dough balls into bagels and apply egg wash and everything bagel seasoning
- Bake in the oven at 375 degrees fahrenheit (190 C) for 20-24 minutes or until cooked through
- Mix together turkey sausage ingredients
- Shape patties and cook for 2-3 minutes on one side
- Flip and cook for another 2 minutes before adding about ¼ c water to pan and cover for 30 seconds
- Add cheese to patties and keep covered 30 more seconds
- Remove from pan and cook egg mixture, shaping as you go
- Assemble the 4 bagel sandwiches and let cool before wrapping in aluminum foil
- Store in air-tight ziploc bag for up to 3 months
TO REHEAT
- It’s best to thaw in fridge for 24 hours (place in fridge the morning before)
- Microwave on high for 1.5-2 minutes, and let cool for 1-2 minutes before eating (it gets HOT)
- If heating from frozen, use microwave’s defrost setting before microwaving as instructed above

I do this with a good gormet vanilla protein powder and frozen blueberries on top almost every day for work. Swear to good the shit tastes like cheesecake. Mad protein.
Nice job on your tortillas. I grew up with my mom making large tortillas such as yours. I tend to make them that way as well. Lately I’ve been placing my cooked tortillas in a gallon size ziplock with paper towels to absorb the steam. Any leftovers are zipped closed and place in the fridge, and there’s less dishes to clean.
But how long should I microwave it for?
I have never thought about adding cottage cheese in the frying process. It makes me wonder, what other possibilities have I discounted unjustly?

Plain greek yogurt plus pudding mix gets you something a little more like cheesecake. I do 170g nonfat plain Greek yogurt with 8g sugar free instant pudding mix. You'll have to use more if you don't use the sugar free kind.

I tried these today they were super good. I don’t know why I never tried the regular ground turkey for breakfast. The cottage cheese was perfect everything about it and you can put it in the freezer! Such a great recipe I’ll remember for the rest of my life😂

Small tip, just blens the cottage cheese with an immersion blender first, help to keep it silky smooth
Here I will help you out with trying this a slightly different way... Spoonful of tomato paste, mix your spices into that tomato paste and incorporate well. Due to the lack of fat with the turkey, frying it off only results in tough texture which only further dries out the meat and giving bad results so here goes: drop the tomato paste in the pan from a cold start and keep the flame/ring on low, you want to start heating up the paste slowly, after around a minute or so, you now want to drop some water into that pan, mix and bring it to a boil. Separate that turkey block up and salt bae those strands of meat into the pan (yes you heard right, we are boiling that turkey, but I prefer to make it sound more attractive and call it stewing in a stock). Reduce that water down on a med/low heat, before it dries up and you are around a minute off being a perfect consistency of reduction, we dump half of that cottage cheese in there, we don't want to cook the cottage cheese for too long, when the milk in it evaporates so does those gains brother. Next, we go on to the eggs, do exactly as you did but when you are around 50% of the way done with those eggs, dump the rest of the cottage cheese in those eggs, now you really can call them cheesy ;) lol Oh right yeah, the veg, sorry mom! get a white and red cabbage, slice those up into really thin strands and salt the shizzz out of them and let them sit for 20mins (draw out the moisture) after time has passed, rinse those off thoroughly and let them drain or pat them dry or if you're fancy use a spinner... anyway! touch of white vinegar, lemon juice, and a touch of salt, mix up and there is your veggie to add in that burrito. Step further, do a Pico de galo if you want to go balls to the wall! Try it out, you're welcome!
