I have lost over 115lbs with a healthy, plant based diet and I have maintained it for well over 11 years. Now my mission is to help others achieve a healthy lifestyle!

Can I ask why you don’t do walnuts anymore?
Because I became allergic to them a few years back.
I make a LOT of black beans. This is a VERY good recipe. I did not have the Jalapeno powder. As a substitute after the cooking was complete, I added Siracha to taste. YUMMY!! I use a Fissler stovetop pressure cooker rather than an Instant Pot. About a year abo I was diagnosed as a Type 2 diabetic. I use beans as a substitute for potatoes.

Are you sure you used 3 cups of rice? Trader Joes rice is a 16 oz bag - 2 cups.
Yes, 3 cups of wild rice to 4 cups of water. Our trader joes doesn't sell the wild rice anymore. It hasn't been available for a very long time.

that's a smart observation about "ethnic dishes" and expectations. make something obscure and delicious that they dont think "is not like __". but f you need to deep fry some tofu and put a sugary fatty salty sauce on the side, we are all better off than them killing an animal, and they will be too! give em rice paper bacon in a bun with fries on the side with sauce..
