Pour overs are so much easier tho. You're often brewing an individual cup so it really takes seconds to boil that small amount of water. Also not having to pour water into the coffee machine which sometimes makes a mess is a plus and it does take some time not to make a mess as well as cleaning the filter without any grains getting on the sides of the machine. It also tastes terrible when you're used to having pour over coffee because there's no residual flavor from any old equipment it's just super clean fresh delicious coffee flavor. As soon as you take the water off the boil pretty much it gets down to the perfect temperature to extract the maximum flavor out of the beans without overheating them and burning them. I can't say enough good things about pour over coffee, because I have managed and worked in several coffee shops. A lot of coffee shops it's mandatory to try any new coffee via the pour over method so you can actually assess the true flavor. ☕💖☕💖☕💖☕

My favorite use of a pour over is for dark roasts and I save the light and medium roast for French presses and cold brews. However a pour over can brew them all. Coffee making from before the age of the coffeemaker, the percolator, or the espresso machine. Granted, still requires the grinding and the invention of the filter, so not mud coffee with grounds in the cup the way coffee was so long prepared and in some places still is. But fairly traditional. Think of it as the equivalent of making tea with leaves floating free in the pot and then pouring into the cup through a strainer.

Working at a coffee shop for years, I can say 2 things with certainty:
    1. All hot coffee drinks at places like Starbucks are freshly ground. Beans are ground fresh for the coffee and each espresso drink. The idea it won't be fresh if it's not a pour over is a fallacy.
    2. A pour over is The most annoying coffee order. It's inconvenient, causes more dishes, and messes with the pace of work dramatically more than any other order.

Milk bases espresso drinks mask any origin characteristics a bean may have, thus it doesn't matter what bean you use. For straight espresso, I find for me, its harder to taste for subtle notes cuz everything is so concentrated and in your face. I always go for pourover (not filter, cuz they run batch brews 90% of the time for this) because it exposes the barsita's technique and the bean, and there isn't many places to hide. Plus I can go for lighter roasts in pour overs which I LOVE!

I work at an Aussie cafe and we make thousands of coffee a day, it's almost always delayed because we get so many orders. Can not imagine having to make pour over coffee. No one has that kind of time

Unless they are passionate about coffee. One of my friends is always happy to do them. But coffee is her passion.

Just get a clever dripper. Is everything you like about a pour over dripper, just without being too tedious to make.
