EASY LASAGNA ROLLS RECIPE // Freezer Friendly Postpartum Meal Prep for New Baby Moms After Delivery

  • In today’s tutorial, I’ll show you how to make these super easy freezer-friendly lasagna roll ups! This is one of my go-to freezer meals to gift new moms when they are postpartum. They can go straight from freezer to oven and are a delicious crowd-pleaser. The full recipe is written below. Hope you enjoy!

    MEAT SAUCE:
    Brown 1lb of ground beef with ½ diced red onion.
    Grate in 2 garlic cloves.
    Once browned, drain the fat and add 1tbsp Italian seasoning and 2 cups of tomato sauce.
    Simmer 5-10 minutes until thickened.
    CHEESE FILLING:
    475g ricotta
    1 egg
    2 cups shredded cheese (I used parmesan and marble)
    1 tbsp seasoning
    Dash of salt
    Mix well!
    Cook lasagna noodles according to package instructions (this recipe makes 12 rolls, but I boil a few extra noodles in case some break). Once cooked, drain and rinse under cold water to prevent from sticking together.
    Spoon some of your meat sauce to coat the bottom of your pan with a thin layer of it.
    To make the 12 lasagna rolls:
    Lay a lasagna noodle out on a flat surface and pat dry if necessary. Spread a thin layer of cheese filling across the entire noodle, followed by a thin layer of the meat sauce. Roll up the noodle from one end to the other and gently lay in the pan you prepared with a layer of meat sauce on the bottom. Repeat x 12
    Once your pan is full of rolls, cover all the rolls with your remaining meat sauce ensuring every inch of the noodles are covered to prevent drying out or burning in the oven. Top with 1 cup of shredded cheese (I used marble).
    To cook these directly from frozen, you can bake them covered at 350 degrees for one hour, then remove the foil and bake for another 10-15 minutes to melt the cheese.
    Alternatively you can cook them right away or thaw them fully in the fridge, and then bake covered at 350 degrees for 30 minutes, then remove the foil and bake for another 10-15 minutes to melt the cheese.

      Oooh I bet that would be yummy! I’ve also made them vegetarian by adding spinach to the ricotta filling and using just a tomato sauce with no meat 😊
