This looks really good. As a recommendation for the potato dish, I'd recommend cooking the onion and garlic with olive oil first, then add the sausage and potato. So much flavour comes from frying onion and garlic, and if the potato comes in afterwards, the flavours can be absorbed as the potato cooks. If the potato is cooked first, they absorb the chorizo flavour but the onion and garlic will only be coating it which isn't bad either but can be better.

I use normal room temperature water still colder then hot water. tomatoes hot so don't touch them> pull tomatoes out ice water remove skin. use knife cool pull skin of x back but pinch pull skin off hand too. cut green skin part out chop peaces. kinds make v cut get green steam out. in large metal pan 2 table spoons olive oil, 1 large onion chopped fine, saute over low heat until golden, add missed 3 cloves garlic ( pull garlic clove part pull 3 cloves cut tips off cut cloves 3 peaces knife squash with thumb put onions to cook) get paper stuff off garlic. saute 2 minutes. add chopped tomatoes , sea salt ( up you how much look lot ) 1 teaspoon oregano 7-8 basil leaves or use teaspoon dry basil . stir lot reduce heat simmer for 60 - 90 minutes until reaches desired texture. 2 table spoons lemon juice remove heat. blending is optional. did not want ruin brother blender so wait cool down completer. also use egg beaters that easer clean that leave hot so seal Masson jar. use funnel on mason jar fill with laddle or spoon if hot enough might self seal. or not plan eat right way hot water bath seal Masson jar. should keep summer vegetables fresh for winter pezza or spegettee.
