A lot of highways are built through rural area and the deer are native to the land and area so they are not leaving but adapted to the surroundings. Therefore wild deer are spooked by cars but the deer around the highway have become complacent. Deer normally sleep in thick brush in secluded low traffic areas.

Why do there eat by the roadside?
It all depends on the forage available, what time of year, and different variables including were the deer born in the area.
Deer sleep in thick, dense foliage, in the open fields, and under low-hanging trees in the forest.

Deer bed down anywhere they feel comfortable and not bothered. Mostly where they have good view of the surroundings and the wind so they can smell anything coming to them. I got 3 bucks harvested cause the wind was in my favor.

the rain runoff from the road gives extra water for the grass just off the highway. So highway grass grows faster and is greener in droughts etc.

Deer sleep anywhere they want. They like to sleep under pine trees. They like to sleep in high grass such as cattails.
Deer usually will sleep in dense brush or in pine thickets. Deer travel for food and (in the fall) sex. In the winter they herd together. Jan and Feb males will shed their antlers and their sex drive has fallen. In the spring mom and babies stay together but they’re pretty much solo creatures until the fall.

To shed some light on your questions. Deer sleep in thickets where they are protected from the wind. They eat on the side of the road because there is a higher level of salt there. Especially up north. Deer love salt. Plus after all the acorns and leafy brows are gone, on the side of the road is where the green tender grass is. Grass don't grow in the woods.
In thick foliage is where the deer sleep mostly and you see more deer on the rd because thats usually the freshest greenist grass.. plus you are driving on the rd more than you are driving through the woods lol

Deer will sleep in a variety of places depending on their living areas moon fazes etc. I seen one needed next to the hwy coming through AL the other night unbothered. They next to the highway mostly because of predators but also because of the greener grass that’s been planted due to construction etc.
I wish l could go back in life l would love to live a truckers life really like watching your vlogs
