I have tried pretty much every keto cake recipe out there and this one was WOW , other level… ✨🍰the texture of the cake itself felt like a normal sponge cake and not the typical hard like stone keto cake.. it was so good 💖 thank you so much for the recipe!! *the only thing I did different was the buttercream. I made it simply mixing butter, cream cheese & heavy cream.

It looks so fluffy just visually, the texture must be on another level
The cake is a medium density sponge cake, but when you put the cream and the berries or jam in between, it softens it up a bit, so it sort of melts in your mouth. It is not too sweet of a cake, more of a European style.

As I mention in the video, if you make my strawberry jam and use it instead of the fresh strawberries, it is exactly like the Victoria cake they serve in England.

Hi Riconat! The sweetener that I prefer to use is Lakanto white or gold, depending on the recipe. I buy the regular granulated and grind it to a fine confectionery powder myself because the prepared confectionery sweeteners have an additional additive to keep them as a powder.

Is keto sweetener xylitol? To bake with?
Hi Catherine! Yes, I use xylitol, especially for ice cream and custards, but most of the time I use a Lakanto erythritol/monk fruit blend as my sweetener.
However, you can use xylitol for everything. Make sure that it is the one made from birch, not corn.

I cannot use almond flour. What can I use as a replacement?
Hi Donna! You could use any other nut flour that you like. For example, for a milder taste, you could make and use cashew flour or, for a little bit stronger taste but lower carbs, walnut flour. Dry roast whatever nut you're using, let it cool completely, and then pulse grind it to a medium-coarse flour texture. To prevent it from clumping and becoming a paste, you could add a tablespoon of lupin flour, oat flour, or whey protein powder.

What could be substituted for the coconut flour? Not a huge fan of coconut flavour but would love to make this otherwise ❤
Hi Maggie! Here are a few substitutions that you could make, just be aware that they will change the taste of it. You could substitute the 30 grams of coconut flour with 45 grams of additional almond flour, or 30 grams of lupin flour, or 30 grams of egg white powder, or 45 grams of whey protein powder.

Is there no sweetener in the whipped cream?
Hi Joy! The whipped cream has an optional 1 tbsp of sweetener as an ingredient. I prefer a less sweet cake, as they are often in Europe, so I leave it up to the individual person to decide if they prefer to include the sweetener or not.

As per my reply to Livia, I have started a new format where I provide the ingredients and quantities as I make the recipe. I find this format much easier for me, as editing and posting a written recipe, and using my old format took me a full day, and people were not watching the videos, just going to the written recipe. With all the changes in CZcams, and people not watching the video through, my revenue is not enough to cover even the ingredients for one or two video recipes.
By not having as much work per video recipe, I am able to spend the time working on my long term project of the cookbook. As well, the recipes that I do videos for I will put in an e-cookbook to sell, to support the channel - but by providing the ingredient and instruction captions, people will not be obligated to buy anything in order to do each recipe. To get a recipe for free will only cost the time to review the video.
