French Style Potato Salad | Fresh and super easy summer side dish

French style potato salad with new potatoes, green beans, tomatoes, red onion and soft-boiled eggs. Served with a vinaigrette-style dressing.
Ingredients (for 4 portions):
- 700 g (25 oz) new potatoes
- 200 g (7 oz) green beans
- 300 g (10.5 oz) cherry tomatoes
- 1 medium red onion
- 5 eggs
- handful fresh dill
Dressing:
- 90ml (1/3 cup) red wine vinegar
- 90ml (1/3 cup) olive oil
- 2-3 cloves garlic, minced
- 2 tbsp Dijon mustard
- salt, black pepper
