- This is how to make a Baltimore carryout style Shrimp Yakamein also known as Dirty Yak. A Baltimore classic at many classic carryout food stores.
Ingredients:
This recipe is about 2-3 servings
- 1 Pack of Udon noodles Pre-cooked
- 1-2 tbsp neutral oil to coat the pan
- 1 to 2lbs of 12-15 count shrimp * Adjust as needed
- 1 tsp black pepper
- 1 tsp salt
- 1/2 cup green onion chopped
- 1/2 yellow onion chopped
- 2 tbsp minced garlic
- 1/3 Cup DARK Soy Sauce
- 1 tbsp sugar
- 1 tbsp Chili Garlic Sauce - adjust to your liking
- 1 tsp sesame seed oil
- Boiled eggs
Addition tips:
- Udon Noodles you can find at any market, I go to my local Asian market for these noodles.
- Dark Soy sauce is different from regular soy sauce, so please make sure to grab dark soy sauce. You can find at your local Asian market like H-mart
- Whether you are using a Sauté pan or Wok the heat should be Medium to Medium high
- Work with the same pan for flavor - have some neutral oil on hand to prevent sicking of the ingredients

Hey Everyone I get asked a lot about the soy sauce, please do not use regular soy sauce. You must use the DARK SOY SAUCE which is thicker and way less salty than regular soy sauce. I have linked the correct soy sauce in the description box with the ingredients. Enjoy! 😊
Have a question. So the garlic and chili was for your liking , right ? The base of it is the dark mushroom soy sauce,sesame seed oil and sugar ??? One more question, which Chinese joint you were cool with that gave you that recipe lol holy grail of Baltimore Chinese food .
@@domjone4875 Yes the garlic and Chili was my own touch since the traditional Yak has ketchup I figured chili has a ketchup base and it has heat so it would elevate the dish. No Chinese place gave me the recipe I worked on it myself based on what I saw and tasted. Let me know how yours turned out!

My husband bought everything but Udon noodles... I personally thought they were lo mein noodles but they was entirely to thin... My husband dum ass comes back with Papperdelle noodles totally off and we both got frustrated and bought fettuccine noodles to substitute. So I wanna thank u ... My favorite Chinese dish from Baltimore
I was searching for a Yak recipe but I knew goodness well exactly what I was going for. Born and raised in Baltimore...and still here as well. I'm from Baltimore & have lived in Cleveland, OH- Norfolk, VA- Harrisburg, PA- & currently Indiana....I have yet to find any dish that remotely comes close (heck no one even heard of it) to this indescribable feel good dish. I've scoured the internet with no luck on a recipe & them BOOM...here you are. Now. My only question is, I noticed there wasn't any ketchup listed in the recipe. Is the Chili Garlic Sauce listed in the recipe what resembles that ketchup taste?
Hey thanks for watching! Yes it’s no recipes out there for our good Yat. My idea for the recipe was to use the chili garlic paste which has a ketchup base. You can most certainly add ketchup in addition to make the recipe your own and give it a try. I would start with 1/3 cup ketchup and increase or decrease from that point. Let me know how it turns out. And remember the key to the dark color is the dark soy sauce mostly found at Asian markets.

The amount of cultural exchange and who-did-it-first or who-did-it-best between New Orleans and Baltimore always surprises me for two cities so far apart. Like bmore club vs New Orleans bounce music, soup/broth based vs fried noodle yakamein, and the continuous back and forth battle to see who wins the yearly murder capital of the country title.
Well here in the Eats with Twan Kitchen it's all about fun recipes and different takes. It's no back and forth over here. I wanted to make sure my people have the Baltimore version of this recipe since there are plenty of the New Orleans version online. Is the original Baltimore recipe dark mushroom soy sauce or just dark soy sauce
There was no original recipe to go off of so I came up with one that looks and taste just like the carry out version. I used mushroom flavor but you can certainly just use regular “dark soy sauce”. As mentioned in my video make sure it’s the authentic dark soy sauce which can be found at an Asian market, do not use the regular table top salty soy sauce. Hope this helps.
Yakamein is a new orleans dish, came from the China Town when it was still there. I didnt know ppl outside Louisiana knew what that was. Yall make it different but it looks ok

Hey! Regular soy sauce wont work for this recipe it’s not thick or dark enough. The Dark Soy sauce is key for the color and flavor of this recipe. Let me know how it turns out

I used to live in Baltimore, Hmart has a good selection of Udon noodles. You will find the dark soy sauce there as well. The "dark soy sauce" makes the difference.
Can I use chicken instead
Yup you can use whatever protein you like. Beef, shrimp and or chicken 🙌🏾
Now fix East bmore (Brown sauce) Yak because that color is not the Yakamein I normally would eat (Not saying it's bad). Some places just made it different i even had one with white sauce and it was good too.

Mines didn’t look anything like urs, I purchased everything you said. The udon noodles I cook mines they look like regular spaghetti, you said urs was precooked from the pack. Please make sure you buy dark soy sauce it’s thicker. I will try this again.
You can get the Udon noodles mostly anywhere but the “dark soy sauce” makes the difference, before I made the video I tried the regular soy sauce it’s too salty and doesn’t give the dish the proper color.
