Refined or unrefined coconut oil?
Hi Carolyn, I can't find Terrasoul's cacao butter. Other brands ok as long as Organic?
You bet. Nutiva has some too that's good.
Do these taste like coconut oil? I have made a different recipe in the pass and when I would bite into it u could taste the peppermint but more of the coconut. And it had a muchie texture.
I don't find that they do but if you're particularly sensitive, use refined coconut oil. It reduces the flavor.

Can we use Kerrygold butter to melt the chocolate?
No, butter tends to make the coating melt too thickly and then it's hard to coat your patties. Cocoa butter or coconut oil work best.

Extract - essential oils aren't always made for human consumption.

Looking at the number breakdown on your blog. I see these are 1.5 Net carbs. Where is the .4g of fiber coming from ?
The chocolate. It has a surprising amount of fiber! Next time you grab a Lily's chocolate bar, take a look at the back nutritional label.
