Sweet Potato Cake | Gâteau Patate | Gato Patate [Diwali Special]

  • The sweet potato cake "gato patate" remains a traditional delicacy for Diwali in Mauritius. Boiled and crushed sweet potatoes stuffed with coconut and fragranced with cardamom.

    Ingredients:
    600 g Sweet potatoes
    2 - 3 TBSP Flour
    125 g Coconut (grated) or unsweetened desiccated coconut
    125 g Sugar
    2 - 3 TSP Cardamom powder (around 15 - 20 cardamom pods)
    1/2 Cup all purpose Flour (For dusting hands and work surface)
    Note:
    The sticky dough can be quite difficult to work. Sprinkle some flour on your
    hands and the work surface before handling the dough.
    Why adding less flour ? - If you add lots of flour and knead the dough as it is usually done for roti, you will end up with an elastic and chewy texture. The sweet potato will also become hard when it is cold. The flavour of the sweet potato will be lost if lots of flour is added.
    Coconut - We highly suggest to use fresh grated coconut for this recipe. Can also use unsweetened desiccated coconut if fresh coconut not available.
    Cardamom - Fresh ground cardamom pods are very important. Home-ground cardamom (both whole pod and seeds only) boasted much stronger flavour than pre-ground store bought powder.
    How long can we keep the uncooked cake in the freezer?
    You can freeze the filled sweet potato cake before frying or baking. Just put the whole tray covered with a cling film in the freezer until they are solid, then store in a labeled zip lock bag up to 3 months.
    Can we bake the sweet potatoes instead of deep fry?
    Preheat the oven to 200°C and line up a parchment paper on a baking tray.
    Spray or brush both sides of the sweet potato cake with oil.
    Bake in the preheated oven until they are golden brown, about 15 minutes.

      Hello, we recommend using normal flour as self raising flour will make the cakes puff too much and a risk of them to open 🤗

    Hi tried your recipe By following the exact measurements and it came out very Oily I noticed Some tiny spots that would open when I closed the cakes I tried to seal them back but it would hardly close resulting in too much oil sucked in the deep fry. All the cakes turn out very oily and no one wanted to eat them.

      Hello, sorry to hear that 😟
      Some sweet potatoes tend to absorb more water than others, thus you have to adjust the amount of flour accordingly.
      Another method is to steam the sweet potatoes and you won't need much flour as you did not boil them.
      For the sweet potatoes not to absorb oil, the oil should be at the correct temperature.
