As shown in the video, it's important to put the garlic in after the onions have caramelized, as garlic has low water content and would burn by the time the onions are done if you put them in at the same time.

I've made this 2 times now. It's fantastic. Very good with Veal tenderloin. It is relatively cheap here as the Italian community tends to overlook it. Make sure you get grain, not dairy fed. Or it will taste and look like pork

Hey... although it is missing the parsley, and i ise herbs de Provence.. this is my own favourite homemade sauce for so many things. Even used it in a spaghetti sauce, as a sort of stock to add. And I use at least 3 times the amount of bacon.. super rich and tasty Edit* I shall call it Sauce Morti
