Pickled bouncy radish. Art of cutting that turns an ordinary strip of radish into bouncy shape.

- I eat pickled ginger, radish, mustard green since childhood all pickled by our kitchen chef. Ingenious cutting technique for bouncy radish strip.
Step 1
Day 1, cut radishes into strips, spread out to dry for 2-3 hours.
Step 2
Smash 3 boxes rock sugar, add together with 2 bottles white rice vinegar in wok and cook in low heat until melted, pour into glass bowl to cool.
Step 3
Cut radish strip to bouncy (slingshot) shape, first cut vertically, turn around and slant-cut, cover with paper towel and dry for 1 day.
Step 4
Day 2, put radish strips into glass jars and pour the prepared vinegar-sugar sauce inside, seal and pickle for 1 day.
Step 5
Day 3, discard sauce in the jars and add new vinegar-sugar sauce, seal and pickle 3-7 days.

不鏽鋼煮酸嘢都唔得啊,因酸性會侵蝕表面釋出其他重金屬,最好都係用玻璃或瓦煲
