Preheat oven at 160°C for 15mins
Yield : 110 - 115 pcs
// Ingredients
120g salted butter (if you use unsalted butter, add 1/4tsp salt)
110g castor sugar
100g brown sugar
195g plain flour
12g potato starch
1/2tsp baking soda
1 large egg
1tbsp vanilla essence
200g couverture choc buttons
For topping:
Sea salt
Dark choc callets

Salam, boleh tp self raising flour ade baking powder. Resepi ni tk taruk baking powder. Kalau awak guna self raising flour mingkin bentuk atau texturenya lain sikit.

Listed below things that i altered according to my preference;
- Golden Churn pure butter: 125g (senang just cut half of the butter)
- Castor sugar: 80g
- Brown sugar: 80g (i use soft brown sugar)
- French vanilla essence (to enhance the smell 😋): 1tsp instead of 1tbsp
- Chopped Beryls Dark Chocolote coins (after chop i letak in fridge balik to make sure dia tk lembik later bila adun)
- Callebaut Milk Chocolate 823 & Maldon Sea Salt Flakes as topping
Since im using milk chocolate as topping, I preferred to reduce the sugar with the total of 160g. But if i were to use dark chocolate as topping, 90g/each would be better to give some of the sweet taste.
After all the mixing, i chilled the batter for 30mins. Then baru bulat2kan.
This recipe could yield 192pcs by using 1/2 tsp. But actually boleh produce more cuma saya dh tak larat to bulat2kan 😂
Next is the tricky part to bake it 😂 I use freestanding cooker with oven. Senang cerita oven yang attached to the stove. With no fan ya. Very the old one..
I bake each tray separately ya 🤣 and using middle section only. While waiting for each batch to finish baking, i just cling wrap my bowl and continue chill in the fridge ya. Then keluarkan balik, bulat2kan and letak topping. By the time letak topping tu, yr dough is not too ‘keras’ already and boleh bake right away.
1. The first batch i bake at 160c for 20mins. After first 10mins, pusing to another side. It turned out a bit hangus around the cookies.
Taste wise - still crispy but ada rasa something hangus
2. Second batch onwards, i bake at 150c at 17mins. After first 10mins, pusing to another side and bake for another 7mins.
And yes just like how i wanted it to be.. not too garing/hangus but still crispy and tak soft langsung! After keluarkan from oven, u have to wait for few mins until dah sejuk sikit then u can check whether is it still soft or not by ketuk2 slowly around the cookies with spatula. If keras all around it, ure good to go 👍🏼
Make sure to always keep yr chocolate chips/callets in fridge while not using it to avoid from cair 🙏🏻
Overall, this recipe is sooo worth to try! I read through all the comments to make sure it turns out good and tasty yalls 🤣 If u dont have sea salts pun still sedap ya🥹 I really hope all of these could help everyone 💘

Saya dah try recipe ni tadi! Serious cakap, I think this is the best chocolate chip recipe that I’ve ever tried! The slight bitterness of the chocolate, the sweetness of the cookies and slight saltiness of the sea salt semua memang ngam sangat. Saya ikut recipe from A to Z, cuma kurangkan sikit gula as per you suggested in some of the comments, and saya kurangkan ke 90gm setiap jenis gula. Still rangup and sedap kak! And my cookies look exactly like in the video, so kepada sesiapa yg nak try recipe ni you guys patut ikut baik baik ya, InsyaAllah mesti menjadi! Thank you so so much kak! Now I can’t stop eating the cookies 😂🙈

fyi, saya guna oven elba 45L letak rak kedua bawah, baked at preheated oven 165' fan 16 mins.

Wow this is actually a no-fail recipe! I didnt have potato starch so i just omit je tepung kentang tu. But nanti next time nak buat lagi i try guna pulak potato starch. And also i tak bakar sampai 16 mins my subway cookies yg besar pun i bake paling lama 15mins so kalau size kecik kecik ni lagi sekejap la, maybe tengok oven kot. I bake for only around 10-12 min and dah siap😊😊😊 you cakap can yield 100-150pcs but i dont know how but i can get around 220 pcs! I pakai size 1/2 tsp jugak haha. @@nursyazafatinahhussin8256 boleh guna mixer kalau tangan tak kuat tp butter dan telur pukul tk perlu kembang. Cuma sekejap je. Kalau kacau guna tangan cuma seminit dua je.
Kalau adunan tak lembek sngt, tk masuk chiller pun boleh. Masuk chiller kalau terlalu lembik sngt je. Doh da rehat 20-30min suhu bilik, baru scoop taruk sebiji2 dlm loyang. Pas tu boleh bakar.

Yes bcos brown sugar gt more moisture so usually choc chip cookies slalu mix both white and brown 😊

@@nurulirdina4622 Kalau takde potato starch or tepung ubi, try use tepung beras. Same measurement. Its for the crispiness. Dnt use corn starch. I dnt know wats the effect if use corn starch pasal tak pernah try.

Salam sis, Alhamdulillah. Kalau tkde potato startch boleh guna tepung beras. Utk meranggupkan lg biskut. Ade yg pernah gantikan dgn corn flour. Biskut akan ttp ranggup kalau tk taruk potato starch pun tp ade beza sedikit dgn adanya bahan ni. Cuma tk rasa sngt pasal sikit je yg kita taruk. Sama mcm emplex. Ada resepi biskut yg suroh taruk emplex tp kalau tk taruk pun biskut ttp rangup. Mungkin kalau kita buat batch yg berganda2 atau resepi suroh taruk bnyk baru kita boleh rasakan sebenarnya ade beza atau tidak. 😊👍 thank you pasal cuba resepi ni dan feedback 😘

Rahiza Dorah oh one more thing nak tanya..from your experience, if for cookies and cakes it is needs to bake in fan mode or just upper and lower mode only? 😆😅 i'm always confuse when to use fan or no fan. Which is your preference ya
Oven masing2 lain2 karenahnya. Kalau sy, sy slalu guna api atas bawah + fan. Kalau fan heat nya akan circulate seluruh oven. Tp ttp kene jaga2 juga. Kadang2 kene balik2 kan tray jg. Kalau tk de oven fan, kene awasi biskut jgn nnt atas je masak bawah tk masak rata. Tp awak kene belajar jg karenah oven awak sendiri. Susah nk ckp.

Salam, kalau adunan awak tak lembek, tak taruk dlm chiller pun boleh. Tp sy taruk dlm chiller sekejap je. Lepas keluar dr chiller baru bulat2kan dan taruk coklat dan seasalt terus bakar. Jgn bakar terus kalau baru keluar dari chiller.

I have two questions.
1. I have a small oven which can only around 10-12 cookies sekali bakar. What should I do with the remaining dough sementara tengah bakar a batch. Leave it to room temperature or letak dlm chiller>
2. Since my oven kecik,agak jenuh nak keluar masuk balik cookies berulang kali untuk buat up to 100 cookies. Possible ke kalau I halfkan the ingredients? Outcome the sama tak agak2? Thank you!
1. Boleh biarkan di suhu bilik je. Tak perlu masuk chiller. Kalau saya, slalu bulat2kan susun bnyk2 dlm dulang semua. Bila masukkan 1 atau 2 tray dlm oven, yg lain sy biar kt luar.
2. Boleh juga bagi 2 atau awak buat 1 adunan, lepas tu bagi 2. Sebahagian simpan peti ais, sebahagian lagi awak bakar. Yg dlm peti ais tu bila awak da ready nk buat baru awak keluarkan. Tp ingat tau, pastikan doh awak yg ni di suhu bilik dulu sebelum masuk oven. Kalau awak masuk oven masa doh sejuk2, nnt biskut stay menggunung, tak leper. Mungkin nnt tk se crispy.

Terima kasih untuk resepi. Saya dah try beberapa kali dan sangat sedap. Saya kurangkan gula sedikit dan menggunakan tepung jagung. Cuma saya nak tanya kenapa cookies saya tak solid macam yang ditunjukkan? Dia cair coklat di tepi nya. Tapi masih rangup. Adakah saya potong coklat terlalu kasar dan tidak halus? Atau penggunaan tepung jagung?

Usually when i make it finishes within a week so im nt sure how long it can last beyond tt. Maybe 2-3 weeks? Try to get those food grade moisture absorber. I think tt will help keep longer.
@@mybakehouse i see, i usually finish it in a day or two, but i want to start early for hari raya so i dont know if i bake early the cookies still in good condition. i use a food grade paper cup too. thank you for replying

Kalau nk kurang manis, guna 90g castor dan 90g brown sugar.

Tak perlu guna mixer. Butter cuma perlu lembut je. Kalau tangan lenguh, boleh jg guna mixer tp skejap je dan kelajuan yg paling kecil, sekadar nak satukan bahan. Jgn di pukul lama2. Tak perlu kembang.

Bila doh da siap, tepikan biar dia rehat dlm 20min lepastu baruk ceput2kan. Kalau doh mcm lembek, taruk peti sejuk jap dlm 10-15min. Lepas keluar dr peti sejuk baru bulat2kan dan taruk choc chip dan seasalt di atas doh. Baru bleh bakar. Jgn terus bakar kalau baru keluar peti sejuk.

Depends, if ur room temp is too warm and ur dough seems soft, then u can keep it chill for a while but if ur cookies are cold and firm, u hv to leave it in room temp for a while before bake.

Hi, yes, i used top and bottom heat with fan. Do u remmbr what u did differently fr the first try? Ur dough temp shldnt be too soft or too cold. If soft then u cn chill for abit before u bake. Keep ur chopped choc in the fridge until the time u mix it. If its burnt then maybe u cn reduce the temp slightly and bake a bit longer? Try bake with a few cookies first bfore u bake the rest.

Hi, these cookies should be crispy. If its soft i think u need to bake a little longer. It all depends on ur oven. Maybe reduce ur oven temp slightly and bake longer? I store mine in an air tight jar or bottle.

Maaf ye, kalau nak recommend oven utk bake yg sesuai sy tk begitu pandai kerana sy guna built in oven brand electrolux da 10 tahun dan sebelum tu sy guna Ariston 15 yrs. Oven sederhana sy pernah guna baby belling dan rowenta. Semua bagus. Actually, oven baru beli semua mcm tk bagus. Yg penting u kene try and test suhu dan cara oven semua a few times. Pasal semua beza2. Kita mesti belajar faham oven kita baru bila bake kek/biskut boleh jd cantik. Lihat link ni i google for u. Harap dpt membantu 👍

I chilled the dough for 30minutes and let it be in the room temp while i put the choc and sea salt.
Cuba keep ur callets chilled until the time u nak add to the dough. Dough shldnt be too cold or too lembek. The cookies mmg meleper tp tak lah flat sngt mcm krisp. Also chk ur oven temp. Mungkin kene lower down abit and bake slightly longer?
