About 45 years ago, my first father-in-law owned a restaurant - he was not Asian nor was the restaurant. He taught me to make steamed long-grain rice by measuring water to my knuckle joint. Since then, I have taught many friends how to make perfect rice using the method you demonstrated in this video. I never knew how he figured out how to cook rice so perfectly & never knew it was an Asian method. He is no longer alive so I guess I will never know how he was taught. I now live in southern Alabama and Shrimp Gumbo is comfort food around here, rice is necessary. I am glad to see where this method originated!!!

Most of us use a rice cooker to cook the nasi lemak. It's easier.
Your sambal looked delicious but is a bit dry, it was ok before you added the onions and ikan bilis.
The onions and ikan bilis are good but we at least I do, prefer our sambal to be with more gravy.
Nasi Lemak is normally served with peanuts- skin on, boiled eggs, sliced cucumber and crispy fried ikan bilis, not all go in the sambal.😀

Thanks Marion for the video. My version of home made Nasi Lemak is pandan leaves, lemongrass, fenugreek, shallot, pepper corn, ginger and a pinch of salt. You didn't wash the rice. Just put them in the rice cooker. Don't put too much coconut milk as the rice will be sticky and won't cooked.
As for sambal, I used the other type of chilli, the curly ones as they are not as hot as the ones you used. I fry the peanuts and anchovies before using the oil to cook sambal. Ayam goreng is optional because the original nasi lemak consists of coconut rice, anchovies, sambal, hard boiled egg, peanuts and a few slices of cucumber. Your version is the present version.
Kudos to you for making the Nasi Lemak, my Malaysia's national dish and favourite among Malaysians. I thank you and proud of you for this.

I have tried your version of sambal and I love it. Surprisingly you don't add salt in your sambal but the anchovies give the sambal that salty taste and I also reduce the tamarind paste from 1 tablespoon to 1 teaspoon. Don't want for it to be too sour.
I am going to stick to your version of sambal from now own cause I love how the fried onion and anchovies mix together with the sambal. I am a Malaysian by the way 😊.
