    Nasi Lemak (Coconut Milk Rice) is a popular traditional dish in Malaysia. A truly remarkable Nasi Lemak (Coconut Milk Rice) is not to be taken lightly. A traditional plate of Nasi Lemak (Coconut Milk Rice) is served alongside fried anchovies, roasted peanuts, sliced cucumber, hard-boiled eggs and an addictive spicy sambal.
    A truly remarkable Nasi Lemak (Coconut Milk Rice) is not to be taken lightly. It constitutes of good quality rice cooked in rich and creamy coconut milk with screw pine leaves infused during the cooking process to create the best flavours and texture. Sambal ikan bilis is a very important component for the preparation of a traditional Nasi Lemak. To make the sambal, first fry the dried anchovies and then cook them with a spice paste, tamarind juice and the flavourful shrimp paste. And what we have is a much craved for anchovy dish, sambal ikan bilis.
    For more elaborate versions, malay spiced fried chicken (Ayam Goreng Berempah), chicken rendang, curry chicken or fried fish are also included. As always, enjoy!

    Thanks for sharing your recipe. A Nasi Lemak seller taught me her secret of cooking the nasi. she added in some chopped ginger and shallots. and tie a few Pandan leaves, 1 tin of rice must add in 1 teasp salt, if not enough salt, not nice at all ! We always use the condensed milk tin to measure the rice = 2 rice cooker plastic cups.
    I also cook the hard boiled eggs in rice cooker, arrange them in the rice cooker, add in 1/4 cup of water, some even taught us just to wet the kitchen towel only, as I don't want to make too much rubbish, just added in 1/4 cup of water to cook even 20 eggs, no problem. Press as if we cook rice and let it cook and pop up. Stand for 10 mins, pour in cold water and stand.
    To fry the peanuts or any nuts like Cashew nuts, Boil them in water with 1 to 2 spoons of salt for 5 mins. Drain. Pour oil in wok, and at once pour in the boiled nuts and on the fire. Always fry from cold oil. Once the nuts are light golden, must drain as it will still continue to cook within 10 mins and it may be burnt after 10 mins.

      rainy D usually when coconut milk is used, salt is added to enhance its flavor

      Sugar you can leave out. But not a good idea to leave out salt as it gives the coconut rice a better flavour.

      +Dominic Joseph yes, its belacan. Its made from tiny fresh shrimp mixed with salt and fermented. It is then ground into paste and sun dried before use. It can be store bought. Hope this helps.

    1/4 of thick means 1/4 cup of coconut milk?

      Mongul Khan Axe 2 parts of coconut milk (cream or thick layer and thinner coconut milk). She means 1/4 cup coconut cream. It should have consistency of yoghurt. You can just buy normal coconut milk, put it in the fridge, don’t shake it up. Take it out when cool and that top hardened layer is the cream. The watery part is normal milk

      Hi, sorry for the late reply. What I meant is you need 200 ml of thick coconut milk for the recipe. But you just use 50ml and dilute with water to cook the rice. Leave the balance 150ml of thick coconut milk to use when the rice has cooked. Thanks

      +cindy low I use coconut milk from 1 coconut so its 200g. But I add only 1/4 of it (50g) to cook the rice. Top the balance with water ( like normal cooking rice). Only when the rice is cooked, then you stir in the balance 3/4 or 150g into the cooked rice. Hope this helps. Thanks for viewing.

      +cindy low pakai 50g santan pekat & 6 cawan air untuk masak nasi. Pakai baki 150g santan pekat cuma bila nasi sudah masak. Campur and sambung masak sampai kering.
