Make the border big and start the snake also big as well. Make some escape points or something and give it a limited time in a timebox. If the food escapes from the snake through the escape point. You win. Make them into multiple levels and make the levels harder as they progress.

It's tough to say... but assuming that you have a pretty decent math background (at least high school level ish), probably 6-12 months depending on how much time you spend on it.
