I tend to use Julia Child’s blender hollandaise. Works really well for me and it never splits. While my eggs are cooking I make the hollandaise. It’s done by the time the eggs are done. I make what I call “New Jersey” Eggs Benedict - I also just make an egg Up instead of poaching. Poaching is a pain in the butt. My family doesn’t know the difference. What makes it a New Jersey version is the pork roll instead of Canadian Ham. I brown it and its a regional specialty. We are known for Taylor Ham or Pork Roll. It is like bologna, only better. I make Eggs Benedict for Valentines Day every year, sometimes for Mothers Day (I would rather cook for myself as my family just makes a huge mess in my kitchen and I have to clean it up.)

I tried the cling film thing once so I could flavour my poached eggs with fresh jalapeños, and the eggs were perfectly cooked but they broke when I took the cling film off. Maybe I didn't put enough oil on but I would recommend poaching them straight in water anyway, it isn't too hard with practice ☺

It is a common thing that chefs obsess with some ingredient and add it to every single thing they can as much as possible even though it doesn't certainly adds any more flavor by adding it over and over again. In this case Jamie does have an obsession with olive oil, adding it to every single thing over and over again even when it doesn't need it. I can tell you as a chef that untoasted English muffins with just drizzled olive oil isn't going to improve the flavour of this recipe every topping for this muffin has it and it does add flavour, but over using it like he does in this case for the dry muffins doesnt do any tricks here to improve the taste of it. That's my opinion, since u asked if I cook.
No, margarine is absolutely nasty! I use butter for some recipes, but generally I use a good quality olive oil, coconut oil for baking and most stir~frys. Not all Americans are roly~poly butter~balls, silly ^_^

Foxx6699 there are few tricks if you don't want to poach eggs like Jamie did. First your water must not be a rolling boil but a simmer. Add a few dashes of vinegar to the water. Crack the egg into a small bowl and slowly lower the egg into the water. I find my poached eggs a lot better after taking these steps. Hope it helps.
