I kid you not I went through four other videos just looking for a simple QUICK how-to. I was skipping through vids just to get through all the chit-chat and nonsense to the part about the egg and then they do all this complicated crap. Strain the egg, only cook one at a time, love the egg. Ugh. This video: quick, no BS, no 10 min intro, here is how you do it and done. Brilliant.
My hollandaise sauce turned into scrambled eggs, so I had scrambled eggs on top of poached eggs, it was delicious... Gordon would be furious

My first attempt came out pretty good. I know what I need to tweak for next time. This was a life saver. I never even poached an egg before or made hollandaise sauce. Thank you so much for this! Really helpful!
It's a half cup of butter or 1 stick of butter in case anyone else was wondering like I was. Just tried to make it this morning and all was well until I left the sauce to stay warm on top of the warm water pot too long and it turned into scrambled eggs. I don't recommend leaving it to stay warm on top of the pot. Other than that it was delicious! Sauce had great flavor and was the right consistency(before my slip up). Will have to try again soon !
Someone suggested to add 2+ tbsp of the boiling water to bring it to life again but never tried that.
I brought my water up to "a running boil" and got scrambled eggs on my Hollandaise. Probably the most important thing you need to know that Chef Ramsey DOES NOT teach here is that there should be just enough heat (not too much, but not too little) for the eggs & butter to meld properly.. this may take some trial and error for you to find out how much heat is right for your specific stove & cooking utensils.
Might want to take the sauce off the heat until needed, than heat it up just a bit. I don't think the sauce is supposed to terribly hot anyway.

I made this with filet and it was wonderful. I put just a mist of paprika and the tiniest bit of parsley for presentation. The Hollandaise took longer than I expected to thicken. Be patient and keep looking at it. It goes from thin to thick all of a sudden and you don't want to miss it!
It took me a couple times to perfect this! I succeeded! A couple years later, I made this for the first meal, that I alone prepared for my boyfriend, and now husband! He is a chef, and went to culinary school! He was impressed! I hadn’t made it in awhile as we were moving! I was nervous to do it today, but made it the best out of all the times! Thanks Gordon Ramsey! My Husband thanks you, and I feel accomplished ❤️🙏🙌. I thank you so much!

hes a perfectionist and has years under his belt of experience in culinary arts. plus, hes showing how to cook, not teaching anyone but himself and to those who may take interest. in my experience, when i cook for the people i love and care about, id be like him to.
Gordon Ramsay is a cooking legend- He’s earned it, and those people are learning under that pressure (from their horrible mistakes).
You learn better with embaressment. Theres a bit of method to his teaching. You won't make the same mistake when you get singled out and called on it.

When i was in hs i made this recipe. But i did the hollendaise sauce with vegan butter because I’m allergic to milk. Everything tasted amazing. I actually managed to get it mostly right on my first try. My mom said it was surprisingly good but needed less vinegar, but as a sea salt and vinegar enthusiast i loved it. Idk why i never tried again since but I’m gonna make it for my friends
I have tried this one 3 times so far but haven't quite gotten it perfect yet. They are always delicious but there are a lot of elements to come together in a short time. This is on my list of dishes I really want to be able to crank out for guests on the weekend. I can't wait until I can actually pull this off well.
A great trick to make hollandaise is to use an immersion blender and tall container (usually sold with the immersion blender) throw in your ingredients, and then just blend once your butter is nice and hot. Never fails, easier on the hands, time saving. Genius.

I make the sauce last. That way, nothing else needs to be hot when served. The sauce will warm everything up. And I don’t have to worry about keeping it warm as I prepare everything else, so I don’t keep it over the steam and risk scrambled or broken hollandaise. Furthermore, it also gives me the option to add a bit of the bacon fat or parma ham fat into my butter for the hollandaise. It unifies the flavors very nicely and tastes marvelous.

Legendary Weapon Don't like that either. Light and more healthy is better. I usually go for an egg or two and whisk with it some egg whites for an omelette or scrambled. Toast and tomatoes cucumbers or a little bit of fruit like bananas or cherries (my personal favs/tastes) with avocado. Tends to take a few years out of the hospital bed later in life :).

I think people are too literal with his ingredient amounts. He might say a tablespoon of this, a teaspoon of that, but that's just a control amount for the people who can't cook. When you do cook, you get a feel for how much you need and some things you can go a little heavier on. Like curry, for example. A recipe might call for 4 tablespoons, but you can use 5 or 6 or even 3. It's personal taste. Some things you can't overdo it. Like vinegar. It's going to be less forgiving if you use too much or not enough.
Basically "Do as i say, not as i do".

You have no idea. He's not kidding when he describes it as posh bacon. What he doesn't mention is that it's extremely salty so you only need to put like two slices on your eggs benedict (Maybe 3 with the richness of the hollandaise).
I love this recipe, I have modified it slightly. Instead of English muffin and ham, I use a slice of prime rib. Takes it to the next level

Yes..this is the best recipe ad technique. The spinning water help make the poached eggs lovely. I make this for breakfast every year on Christmas morning.
Gordon is an amazing teacher. I understand everything he says and everything he makes looks delicious.
And he gets straight into it. 2 seconds in and the water is boiling and he's cracking eggs. Other people on CZcams spend 2 minutes to get to the actual cooking

When I was in grade 10, I used this as my guide in our cooking class. I practiced in our home to get it right. Next day, I was the one shouting orders and telling other people what to do. Got a 20/20. Really proud of that, ours was the only hollandaise that was actually silky.
