    Hi Ryky. I know this is a little bit late. I fully endorse your efforts to include German knives because this is a great range of really good deals out there. I would also be very interested in seeing your reaction to a Belgium Brocken. This is actually one of the polishing stones I grew up with when my father taught me how to sharpen knives.

    Greetings from Australia. I own a Miyabi Birchwood. Wondering whether a Cerax 1000/3000 combination would suffice for sharpening. Also what would be adequate for grinding out chips? Ta!

    "I don't like high gloss on my knife" I think it is ok for a kitchen knife like Gyuto, but for single bevel or Yanagiba you need that clean polish bevel. From shinogi line down to the cutting edge, that's why when you see a professional sushi chef they often use a mirror finish Yanagiba or honyaki. They chose that finish for a reason. You can slice fish like feels like slicing thru air. Meat does stick to your blade or create friction.

    Yeah the shaptons 5k is a good stone in the series..it is a great mid range for razors but I understand your concern for knives

    I have the Shapton Pro 5000 and the 6000 King and think your comments are about right.
    The Shapton 5k is not a fun stone to use, and i would happily swap mine for something else on your desk. That's not to say it's a bad stone, Shapton are a superb company producing highly effective tools, but it is not a pleasure to use. It does work very well, very quickly and is much admired by wood workers i believe. However there are better stones for kitchen knives if you're the kind of person that actually enjoys the meditative process of sharpening.
    My 6K King - a standard, thinner stone than the combi stone here - is actually more pleasant to use and has better feedback. It does get very soft and dishes easily, but it feels smooth and is rewarding to sharpen on.
    One of these days i shall get my hands on the Suehiro Rika, a stone i'm confident i'm going to appreciate.

    Hi Ryky! Got a question for you.
    Considering I use carbon steel knives hrc 62-65, after a day at work they are still sharp but not razor sharp. What stone would you recommend (just one stone) as a quick touch up instead of starting over from a 1k because I think it will consumes to much steel over time. Thx

    Hello there I like so mutch what you doing and I learn with every single video I see,but I have a question,I sharp for restaurants kitchen knives and I have some problems with the stones,they seems to dull mutch faster,so I need some advice what profesional stones you recomand to sharp profesional kitchen knives I use between 400 to 3000 and then to finish I use leather strope,thx

      i think a good 800 or 1000 stone plus leather strop is best for you. since stropping takes much less time than 3000-6000 polishing stone.

    Hi!
    Have you tried to finish the sharpening process with leather? After finishing with 3k or 8k or something do a cut test and then sharpen a bit with leather (just a couple of moves) and do the cut test again. I'd really like to see if there is any difference.

    thanks again for all you do. My current stone lineup (even though I have many of the other stones that you reviewed) I start with the shapton glass 320, then use the Naniwa/chosera professional 1000 and then end with the Cholera 3000. That is from no edge (I make knives) to wicked sharp. I have you to thank for this line up!!!!!

    Hey ryky, gonna buy à kramer knife this week and I'm choosing between the carbon steel or the damascus one.. I've actually waited to buy the knife because I'm waiting on your review of them.     Question, I am looking to invest into a set of stones not $1000 but $400 or so and have learned that cheap stones simply suck ... I have bought many stones but I get the best results hands down from my simple Naniwa Traditional 1k/3k combo stone that I have had for five years and I get a reasonably mirrored edge with the 3k without a ton of effort ... I am choosing really between the Naniwa Super Stones and the Shapton Glass stones they will be similar grits and then I am thinking adding an 8-12k to the set ... I have watched your reviews of both but do you prefer one over the other ? It's a tough one to me I trust Naniwa as their lower end stone produces consistent extremely sharp knives for me but the hardness and smaller profile of the glass stone is quite appealing as well

      overall, the shapton glass stones are faster, and offer better feedback. super stones are a bit soft, especially at the lower end of their grit ranges. so, if you don't mind mixing, i'd go with super stones for grits over 3K, and shapton glass for under 3k. basically,. super stones are great polishing stones, not great sharpening stones. shapton glass are great all around, but i would get the the shapton pro 120 over the shapton glass 120. here are my top picks for stones and knives . kit.com/Burrfection/knife-kit

      Thanks for the quick response I Interesting you like the shapton pro 120 I thought they were on your don't buy list but at that grit I can understand feel not being of concern ... I am going to buy the shapton glass 1000 and then move into super stones for higher grits perhaps 4k and 8k as I know the Naniwa stones will provide the polish I am looking for ... the shapton glass stones are appealing though for certain I just know the Naniwa products are excellent

      So I've ended up getting more stones than I originally thought of course ... I ended up with the shapton glass 320, 1000, 3000, 5000 and the Naniwa SS 8000 and 12000 I probably will never go through that entire progression but I had a gift card and decided after the 1000 it's a matter of what I am using the knife for ... my chefs knife I don't see a reason to go past 3,000 but my deba for example I may take all the way to make filleting fish more pleasurable ... cost me under $500 including some other accessories

      "Burrfection" Because it's a Scandi grind LT Wright Genesis that came with a mirror polished bevel right out of the box and it was aesthetically pleasing so I'd like to return it to its original condition or at least as close as I can get it to its original appearance.

    If the Naniwa Chosera (Professional) 3000 and Naniwa Superstone 3000 were the only two options you had and the diiference in price wasn't an issue which one would be your first choice and why? I'd appreciate feedback from other viewers as well.

    If I can only buy 1 stone for sharpening 58 to 61 hrc knives would you recommend a 1000 grit atoma plate?

      I've worked in a commercial kitchen, and I'd say if you are only allowed one stone, a medium grit like a 1000 would serve you fine. Diamond plates? Not so much, for the same reasons why I don't recommend using sharpening machines. Grit/abrasion in sandpaper, waterstone/whetstone and plate works very differently.

      Neil oppa atoma is very good and would serve you very well if you can sharpen. A 1000 naniwa choosera/proffesional would also be very good

      knife sharpening norway, it's going to sharpen but it might not be the level of refinement ideal for his knife. Diamond plates don't shed trailings well (which is why some plates have dimples on them).

      the 1200 atoma is nice, and can handle ALL HRC ranges. the only thing i would say, is the feedback is nothing like a whetstone. if you really want just a single 1000 grit stone, go with the Cerax 1000, OR go with the Chosera 800, both here. however, if you plan on doing any sort of flattening of polishing stones with the atoma 1200 is also great for that.

      Shun stone? Seems overpriced (that's Shun for you).
      You shouldn't be paying out the ass for a medium stone, much less a combination stone. For the price of a Shun stone I could buy 2 good single stones (medium and high) and get more value for my money.

      Through work I have several accounts that I have to use and these were what was available to me. Assuming the Shun is a chosera it wasn't a bad deal. The other was relatively cheap along the lines of a king in price. We shall see but who knows until I get them really? Thanks for the advice.

    hello, Can I not use the polishing stone after finishing on a sharpening stone(like after chosera 800)? Will the result will be the same if I use leather stop with loaded compound?

      you certainly can. as long as your edge is clean, there is no need to hop on a polishing stone, instead of a strop.

      May I ask what is the purpose of the polishing stone anyway? Why do people need to move from a smaller grit to higher grit? Will it make the edge retention better than honing on the strop? As I understand honing process is removing the access materials left on the edges after we sharpen the knife, so I don’t know why there are such a high grit stone like above 8000?

      Aesthetics mainly I stop at 3k 99% of the time unless I am trying to get a mirror type finish

      Sure sorry for the 3 yr delayed answer you prob know by now.
      Naniwa ss is a soft high polish resin based stone, kinda not a natural feedback but with time you get the benefit of a great polish.
      Pro is more of a natural stone feel and great for knives but they don’t have an 8k in that range anyway but the 10k is great.
      The Snow White is beautiful and you can’t go wrong with it in my opinion, a true 8k and a nice feedback and results.

    if u like the chosera 3k, you should try the 2k and the 5k they both feel better than the 3k....a little bit softer.
    polishing with the 5k is amazing.

    Hi RIcky I have the nanawa pro 400 and the 1k and 3k stones as wellll as the king 6k and the kitayani 8k stone looking forward to you comparing the kitiyarma 8k stone to your other 8k stones does nanawa make a stone higher than the 5k stone my supplier in australia only sells stone s up to 5k in nanawaa pro stones

      Yes, Naniwa make #10,000 and #12,000 stones. Shapton make a #30,000 and Suehiro make a #20,000 although both are the same grit, 0.48/0.5 microns respectively. Shapton make a #12,000 stone which is 0.98 microns. Naniwa #10,000 is around 1.47 microns.
      Naniwa Superstone (Japan only these days) #10,000 is a great polishing stone. It loads fast and feels weird but the results speak for themselves.
      What is available in the US is different than what is sold in Japan, and AU to a degree. We always get Japanese domestic market only products. For example, US sellers have been saying for a few years now that Naniwa Chosera and Superstone have ceased being made and changed into Professional and Specialty Stone. This is completely false as the later two lines are only for people outside Japan; the former two are still sold in Japan.
      Get a new supplier as most stores in AU are of a very poor quality as far as range and prices go; unless they are specialists stores who have a larger grit and company range.
      In a truth you’re better off buying from Japan on eBay as you will get anything you want and often for much less.

      I'd wager your best option if you're looking for a single stone is a 1000/3000 combination stone. Depending on brand, I'd guess you're looking at a minimum of 60 bones for that? I could be very wrong.

      Either ways, isn't going to be expensive, because medium stones aren't expensive so £30/$40 would do you just fine. I've got a Kiya 1000 roughly in that price range, and a King 1000 would have been my choice if it was mounted on a base.
      My problem with combination stones is that if you don't flatten both sides you start to get...problems, but the same could be said of single stones that's not mounted on a base.

    have a solid backup schedule is really, really important for filmmakers (especially after you bork up :P ) Have it as thing you always to every day no matter if you film 1min or 5 hours. always back it up on a separate harddrive

    Next time download a program to restore deleted data from your SD card, it is easy as two clicks if you do not write anything on the card after formating :\ (after you write on it it is not the same story as you write OVER the old datas still on the card, because yeah when you format you most of the time just tell the card it is empty but datas are still physically written on it, unless you do a big format which writes "0" all over the card.

      I have a question regarding this 2 types of metal
      VG10 + VG2 steel "Dual Core" that is in the new Shun Hikari
      VS
      SG2 powder steel that is in the Miyabi Birchwood series
      Which is better??

      HeyLexGo! SG2 hands down, no competition. I would look at the Miyabi Artisan line in SG2, (the 240 gyutoh is great) warikomi clad, cocobolo pakkawood handles, like 10 dps. I have the whole line and love them.

      HeyLexGo! Not nearly as much as VG10, Miyabi runs their SG2 at 63 HRc +/-, that's already a plus over VG10, but it also has about 2.2% Vanadium and 3ish % Molybdenum which is great. It's mildly more brittle than VG but I've never had problems, I wouldn't ever cut through bones/frozen foods with it though personally.
