Everyone's surprised that it turned out so good but fish sausages (especially salmon) are already a thing that exist and using a smorgasbord of high grade fish was bound to be great
I was gonna comment about that as well. The Japanese have been making fish sausages for forever. And fish sausages/balls/cakes/etc have been immensely popular for forever in Asia in general as well. Mr. Sausage basically just accidentally made one of them suckers (in probably a very similar way) without realizing it.

I was scared they would burst or be dry but it seems the fishes were fatty enough to make em great. The addition of the wasabi and ginger and soy sauce definitely are also contributors to that success.
