    Mango Jam:
    Ingredients
    Mango cubes ½ kg
    Sugar ½ kg
    Lemon juice 2tbsp
    Method
    In a pan add mango cubes, sugar and lemon juice , now mash with masher and cook then save in the bottle and serve .
    Caramel chocolate cheesecake:
    Ingredients for base
    Candy biscuits crushed 2- ½ cups
    Melted butter 4 ounce
    Ingredients for cheesecake mixture
    Cream cheese 8 ounces
    Whipped cream 2 cups
    Lemon juice 1 tbsp
    Gelatin dissolved 2 tbsp
    Vanilla 1 tsp
    Butterscotch essence ½ tsp
    Condensed milk ½ cup
    Ingredients for caramel swirl
    Caramel toffees melted in cream 15
    Chopped chocolate 1 cup
    Ingredients for chocolate swirl
    Dark chocolate 1 cup
    Cream ½ cup
    Corn syrup 1 tbsp
    Method
    Mix crushed biscuits and butter, spread in a spring foam 9 inches pan, bake for 10 mins on 180 d, cool, beat together cream cheese, condensed milk, both the essence, lemon juice, add in whipped cream, dissolved gelatin, fold in chopped sneaker chocolate, now pour this over the biscuit base, melt together caramel toffee and cream, add dollops of it over cheesecake layer and use a skewer to swirl, melt together chocolate, cream and corn syrup, and again add dollops over cheesecake layer and use skewers to make swirls, add some more sneakers on top, refrigerate for 4-6 hours, remove and serve.
    Shanghai fried prawns :
    Ingredients
    Prawns ½ kg
    Ingredients to marinate
    Flour ½ cup
    Corn flour ½ cup
    Egg beaten 1
    Crushed garlic 1 tsp
    Soya sauce 2 tbsp
    Vinegar 1 tbsp
    Ginger garlic 1 tsp
    Salt ½ tsp
    Black pepper ½ tsp
    Oil for deep frying
    Spring onion leaves 2 tbsp for garnish
    Ingredients for sauce
    Crushed garlic 1 tbsp
    Lemon juice 1 tbsp
    Brown sugar 2 tbsp
    Ketchup 3 tbsp
    Worcestershire sauce 1 tbsp
    Water ½ cup
    Corn flour 1 tbsp
    Salt ¼ tsp
    Black pepper ¼ tsp
    Oil as req
    Method
    Marinate prawns , leave it for 2 hours, deep fry.
    Method for sauce
    Heat oil, sauté garlic, add all the rest of the ingredients, cook till it thickens, fry toss prawns in sauce, serve garnished with spring onion leaves.
    Vegetarian salad tartlets:
    Ingredients for tartlets
    Butter chilled 100 gm
    Flour ¾ cup
    Corn flour ¼ cup
    Salt ¼ tsp
    Paprika ¼ tsp
    Sugar ½ tsp
    Black pepper ¼ tsp
    Chopped parsley 1 tsp
    Cheddar cheese grated 4 tbsp
    Ingredients for salad
    Iceberg chopped 1 cup
    Tomatoes 1 cup
    Basil leaves ¼ cup
    Oregano ½ tsp
    Garlic powder 1 tsp
    Olive oil 2 tbsp
    Kidney beans ½ cup
    Baked beans canned ½ cup
    Sliced olives 3 tbsp
    Cottage cheese crumbled ½ cup
    Onion chopped 3-4 tbsp
    Cucumber ½ cup
    Vinegar 2 tbsp
    Salt & pepper to taste
    Chopped garlic 1 tbsp
    Method Heat 2 tbsp oil in a pan and fry garlic and basil leaves, remove in a bowl, add all the remaining ingredients and toss together, serve in prepared tartlets.
    Method:
    Put all the ingredients in a chopped and process till it resembles bread crumbs, press the mixture in your palm and see if it stays together to form a ball, it’s ready, if it doesn’t hold together, add a tbsp. Or two of chilled water, use finger tips to gather the dough and roll it out ¼ inch thick using butter paper, use a cookie cutter to cut out circles, place these circles on a greased tartlet moulds, prick with fork and bake on 180 d for 15 mins till they are done, cool, remove on plate and fill with prepared salad.
