- If you have struggled like me to make a decent sponge cake over the years, then this might be the recipe and video tutorial for you!

Ingredients
2 cups all-purpose flour or cake flour
2 tsp baking powder
1 tsp ground cinnamon
½ tsp ground cardamom, optional
1 tsp Himalayan salt
4 large eggs, room temp (9oz)
1 tsp pure vanilla extract
2 sticks butter, 8 oz, 227g. 1 cup (tested with Kerry gold)
1 cup granulated sugar, 8 oz 228g
3/4 cup evaporated milk, or whole milk or orange juice,
Pre Heat oven to 190 C/350 F/Gas mark 5. Grease and line bottom of baking pans (6, 8 or 9 inch) with parchment paper or prepare using butter and flour-doing so lightly on the sides.
Place sifter in a bowl, add in flour, baking powder, cinnamon and cardamom. Sift, whisk a couple of times to lighten and set aside.
Crack the eggs into a medium bowl, remove white bits, add rind of a lime and vanilla essence. Set aside.
In a large bowl or the bowl of an electric mixer, add butter and whisk on high for 1 minute.
Add sugar and whisk on high speed(level 2) until it is smooth, light in color, fluffy and doubled in size, about 5 minutes. Scrape down the sides and bottom mid-way.
Add eggs one at a time, and beat until combined, each time about 15 seconds. Scrape down sides as well to ensure that it is mixed evenly.
Divide the flour into 3 and add one third at a time mixing only until combined, alternating with the milk. Scrape down sides and mix gently with a spatula to combine one last time. Remove lime rind and discard.
Pour batter into the prepared pan, gently smooth the top with a spatula.
Place immediately in a preheated oven(middle rack), 350 degrees F, and bake 40-50 minutes or until golden, a skewer inserted into the center of the cake comes out clean. The center should be springy to the touch as well. Do not open the oven for the first 40 minutes.
Remove pan from the oven and let it cool for 10 mins. Invert onto a cooling rack, remove paper and flip again.

Even I love Kerrygold butter. I even make ghee (clarified butter ) using kerrygold unsalted butter and it tastes so much better. Thanks for sharing this recipe with all your tips and advice.

We all are singing, the same song when it comes to homemade sponge cake .😊 thank you I tried your recipe and after all these years of struggling it came out absolutely amazing !!!❤
I totally understand about the different recipes. It took me a while to stick to one but I never had a problem with cakes not being moist enough. You can have a moist cake with as little as 1-2 eggs. What I find works for me is when I alternate the buttermilk and flour during the mixing phase. I've even seen some people use a waterbath. I tried it once but I find that it slowed the baking process and I didn't get the result I wanted. I've also tried adding oil as some bakers do. However, you'd have to be careful, adding too much can produce a dense cake. I usually add a TBS if I think it's needed, but not every time. Of course ovens, methods and ingredients vary but wanted to share what's worked for me.

Excellent job! I totally understand your predicament in making the "perfect sponge cake"...Recently, I found myself in the same situation after successfully accomplishing really delicious cakes before. One thing i realized that locally we used margarine a lot compared to butter and when i made the switch over to kerrygold butter/ coconut oil mix and caster sugar, which i made as it's hard to find here it made the world of a difference. The texture was amazing. Btw I love your presentation and uniqueness you bring to your videos. You show your mistakes with the intend of helping others and never pretend to be this perfect CZcams cook unlike others. Continue doing a great job!God bless 🤗

Hi Ria, I tried this recipe but when I took the cake out of the oven it fell as it cooled down. I don't know what I did wrong 😕
Did not bake long enough or the temp was too low. Does your oven run at a lower temp? Did you use old baking powder? Did you measure it correctly? Was the cake raw in the middle ? Did you open the oven while baking? These are some of the reasons you might be experiencing this issue. You may have to buy a thermometer, set the oven temp and check the thermometer to see if it is the right temp. If it is, you just need to bake longer. How many minutes did you bake for?
@@CookingWithRia I baked the cake for 45 minutes the texture was a bit dense but the flavor was really nice. All the ingredients I used were new. I'm not sure if it was the oven
Could be the oven. Next time bake longer and see if that makes a difference. Did the skewer come out clean? Dense is usually also the result of under baking or over mixing of the flour or eggs. What liquid did you use? What size pan did you use?

So I tried this recipe not sure what I did wrong but mines did not turn out well. Also for me the favour was just not for me. It’s not a bad cake but I guess I just hate cinnamon in a cake

Could be you are using a bad recipe -nothing can fix that. Please follow instructions on video and recipe exactly as I have done and you should have a great cake. Let me know if you encounter any further issues. Your oven can also be the culprit. Get an oven thermometer to see if it is not heating to the set temperature. Also fold in flour, use new baking powder and do not open the oven while it is baking. Good luck.
