Making Valencia Style Horchata out of Tigernut

- In the United States, the Mexican-style horchata that is pretty sweet and cinnamony is pretty common, however, it’s not the original version of this. Just like chorizo, the Mexican version is an adaptation of a Spanish recipe that is slightly different from the original. This version of horchata is made not from rice, but a nut is known as Tiger nut, and tends to be a lot less sweet than the Mexican rice-based version. Just like Mexican horchata, it’s pretty simple to make, and it makes a nice refreshing cold cinnamon drink, however outside of that, the tastes are quite different. Because it’s nut-based instead of rice-based, it’s almost like the difference between rice milk and almond milk. This stuff is extremely delicious, and refreshing. It is amazing that it has such a complex flavor for being such sugar and tiger nut.
Ingredients:
1 cup of tigers nut (450 grams)
4 cups of water (75 grams)
¼ granulated sugar (75 grams )
¼ teaspoon of salt - Jak na to + styl
I'd love to try tiger nuts sometime but I'm concerned about the ethics of it, like what the tigers have to go through and the risks taken by the harvesters to get it to my hands

had this drink back in 2013 and I loved it so much the flavour just stayed in memory every time I remember this drink I just get the flavour in my mouth, hope I can go back to Valencia soon
This is one of the first/only videos I've ever seen on the original horchata with chufas! Looks so simple like it should be, just the nut/seed/rice and water, NO DAIRY. Mexican recipes with condensed milk are sickening me lately. Somewhere along the way adding milk became a thing and it ruins it for me now that I wanna make my own. Looks like a nut milk bag is the secret to extracting all possible flavor without adding anything else for the creaminess.

Never has the mexican one but the valencian one is delicious, traditionnaly it's drank in 'slushy' form
horchata made from chufa is a lot richer because the seeds have high oil content like soybean and peanut. Mexican version is made from rice, and rice has no fat in it, so in order to add richness to the Mexican version, they add wholemilk, evaporated milk and condense milk to increase the fat content in the drink.

Not really, when horchata is made with almonds, it’s usually sweetened and flavored with cinnamon, which it would most likely not be if it were called almond milk.
I don’t really see how this isn’t just tiger nut milk.

The authentic horchata is a recipe from Africa, taken to Spain by the moors. I guess that's why Spanish also call tiger nuts chufas. Use dates instead of sugar for a healthier and more authentic recipe.

I tried Valencian horchata in Spain and for reasons unknown to me it tasted like chlorine? Like total pool water vibes.... I think I am just odd.
