I'm not sure if I understand the tech demo right but it seems to be able to simulate not only the fluid level but also the change of center of mass of said fluid. It would be interesting to see if it would make sense for simulating the weight of fuel sloshing about as you drive. For normal cars it might make little difference but for lightweight stuff like the 60s Grand prix cars or GTE cars it could make a notable change to the model.

well, it can be used for simulate the fuel inside the fuel tanks, but considering that the player wont even see it, it don't makes sense

You are correct. The car's body is affected by the dynamics of the center of mass and waves.
