Here are the ingredients for the recipe:
    Orange Marmalade
We previously wash and peel about 6 oranges and cut them lengthwise, not too thick and not too thin, without the white part.
    Ingredients:
    5 or 6 oranges
    Water
150g white sugar for the syrup
    Additional sugar for glazing
    Preparation:
Wash, disinfect, and dry the oranges thoroughly to ensure they are clean and free of any insects.
Remove the orange peel and use a knife to remove most of the white part. Cut the peel lengthwise, neither too thick nor too thin.
In a pot, bring water and salt to a boil.
Then, add the peels and let them boil for 10 minutes. Remove from heat, strain, and rinse with tap water.
Repeat this process, but this time without salt, and boil for another 10 minutes.
This is done to remove the bitterness from the peels.
Strain and carefully dry the peels on a clean kitchen towel.
I left them on the towel for about 6 hours.
    Next, prepare the syrup.
In a saucepan, combine 150g of white sugar and a cup of water.
Once it starts boiling, add the peels and cook them until a delicious syrup forms, which you can use for future preparations such as glazing cakes, injecting into cakes, cupcakes, cocktails, or other gourmet preparations.
Stir occasionally with a wooden spoon over low heat.
The syrup should not caramelize but remain transparent and somewhat thick.
Remove from heat, strain, and store the syrup in a clean, sterilized glass container in the refrigerator. It can last for months if not used quickly in other recipes.
Continue by drying the sweetened peels on a rack placed over a baking sheet lined with parchment paper.
Let them drip until excess syrup has drained and they have lost moisture.
After that, coat the peels with sugar and let them rest again to allow them to glaze. You will notice that the sugar no longer appears granular, and the peels should look shiny and not feel wet, just soft and sweet.
These peels are ideal for mixing into sweet bread like panettones, orange cakes, or muffins, or for decorating your dishes.
They can be excellently preserved in a sterilized glass jar in the refrigerator for a long time.
I hope you enjoy this wonderful recipe as a treat or to complement other sweet or savory dishes.
