Honestly the most interesting part of this to me is that Gehrman isn't doing this out of some self-centered reason like he's threatened by you or he doesn't want you to take his position. He hates running the Hunter's Dream and cries out in his dreams for Master Lawrence to take him out of it. The only reason he's doing this is because he doesn't want you to have to be stuck in his place for eternity. It's a fate worse then death for him to be stuck there but he would never inflict it upon anyone but himself.

He doesn't come off as particularly heroic in the rest of the game but he knows the harshest thing you can be in Yharnam is being a Hunter, and that Hunters are the only people truly trying to fix Yharnam. Which makes him the closest thing to a hero there is in Bloodborne besides maybe the main Hunter.
Same here. I saw this scene for the first time and I was scared! I bought the game with DLC, so I knew how hard bosses could get (kos) but they didn't get epic build-ups. Now Gehrman comes in, with a minute-long cinematic, beautiful scenes and backgrounds. A full moon hanging over our heads. And I realised this may have been a terrible decision
He's killing them as to release them from the Hunter's dream. Because he knows that they can't beat the mastermind (Moon presence) and if they do beat him they'll replace Gerhman's job and forever be stuck inside the dream. He's very self sacrificial.
He doesn't want to sacrifice himself to save other hunters dream he acts this way just because of the deal he made with the moon presence . It is an act of honor rather than sacrifice.
It's kind of weird to think that a battle to the death is in reality a battle to save each other. In the end the only way out of the dream is to let Gehrman execute you but the only way out for him is for you to kill him.
0:39 Notice the sudden model change for Gehrman. Seeing as the laws of reality are pretty wonky in the dreamlands, I think this is Gehrman retaining some aspects of his younger self to battle you, as it has clearly been a long time since he last joined the hunt.
It's actually because that model is a totally different NPC from a different script, but they didn't have good model for Gehrman's boss battle so they just stuck his face on it.

Make way for the leader. The First Hunter.

Their bodies are a physical obstacle between the player and the truth, whether it's the true mastermind of the Hunter's Dream or the origin of the Hunter's Nightmare.

Unfortunately FromSoft made it a statement that Dark Souls 3 would be their final game over that series, and this was back when they released it. So it's not a matter of what the people think, but the fact that FromSoft have no intention on continuing the series.
