  • One of our favourite foods for our family is Quinoa. Quinoa is considered by some a Superfood. Its become super-trendy the last few years. Its not really a grain but a sudo-grain that is similar to ancient grains. Its really a seed that is commonly found in South America. Its a complete protein providing all the 8 essential amino acids which is very rare in the plant family. Generally, a complete protein can only be found in animal products. So, its also high in fiber, calcium, magnesium and high in iron.
    Being in the goosefoot family means it’s more closely related to beetroot, chard and spinach than to cereals. People of South America have been eating this beneficial food for thousands of years. Quinoa sounds perfect!! So what is the problem? Are there any bad side effects of Quinoa and how to avoid it? Well, the only issue you need to consider that I would like to address is the problem with saponins and your intestines. So, what are Saponins?

    Quinoa has been eaten since ancient times by Inkas civilization. I am Peruvian and and my mom taught me to soak quinoa overnight and rinse while rubbing them with both hands. That's the proper way how to wash it. Unfortunately, when quinoa is sold abroad the instructions dont mention to soak it. Native people in the highlands have the knowledge...this super food is amazing as long as it is soaked and washed properly.

    Thanks for those that dont know. :) Also, just in case anyone wants to know; you can also cook quinoa in a rice cooker. In fact, I do it all the time and it comes out perfect.

      Yes, I like to add quinoa to my rice dishes. It cooks so similar its easy to do. I use my rice cooker and mix equal parts with brown and black rice. The rice cooker cookes everything to perfection. Sometimes I add a can of rotel to spice it up.

    I cooked it in almond milk with a squirt of agave nectar and a pinch of salt so when it was done it was like porridge. I added banana to it to add some more sweetness. Yum

      I'm bolivian, that isn't entirely true, last week I bought a bag of 400 grams of black bolivian organic royal quinoa, the best quinoa that you can find in less than 3 USD and in a high end supermarket, regular quinoa can be found for even less.
      Also don't forget that we have other super foods that you haven't even heard about, like cañahua, wilcaparo or maka, this only from the Andes part and copoazu, asai or achachairu from the Amazonian part

    My daughter LOVES quinoa and started eating it three days a week. Without knowing where it was coming from started having serious stomach and intestinal problems also causing severe anxiety. We did multiple doctor visits, labs, elimination diet etc.... Finally realized it was from her organic quinoa from Costco. She just stopped eating it so hoping that'll solve the problem. If it does, she'll never touch it again because this has been awful!! Great video👌. Thanks

    Been eating quinoa for a very long time. Last couple years, despite a good rinsing, it didn't sit well. Didn't want to give up on it, given how healthy it is, so tried your overnight soaking method with ACV. No more issues. Yum. :) Thank you!!

    Thank you. I didnt know of this. I had Quinoa for dinner and all I did was rinse it. I by Wholesome Pantry and that was their instructions only to rinse. Now I will start soaking too.

    This food is staple in our family being South American. We rinse it and soak it well. Also, people use the saponin as detergent for cleaning since its so strong. So properly rinse and soak your quinoa. Good job on this video. Thanks for sharing.

      I remember watching a video about washing wool and the ladies were using a plant based detergent. Is it saponin? People use it to wash their clothes? Any info is highly appreciated. Great Mother Earth gives us everything we need, including detergent!

    Nowadays most of the supermarkets sell pre-washed quinoa, so no need to soak and rinse anymore because the Saponin has been rinsed off. Pre- washing the Quinoa takes the bitter Saponin taste out.

    Even when the box tells me it is pre-washed, I wash it thoroughly in a pot and rinse several times until the foam is no more, THEN I know ALL the saponin (bad for my gut) has been removed.

    I dug deeper with reading various sources and experts recommend wash/rinse and soaking it. I agree with rinsing and soaking properly now which I wasnt aware prior.
    To sum it up grains and legumes can be very hard to absorb and digest, especially modern day grains. They mentioned proper “traditional” way to prepare grains allows you to properly digest them. Unfortunately in the fast pace society that we live in, most individuals have eliminated this process all together.
    Many agree grains are not bad for you..only if they are not properly prepared. If grains are not traditionally prepared properly then grains should not be consumed. Bottom line, they say if you want to eat grains and/or legumes you must soak, ferment or sprout them before eating them. Why? Soaking is necessary. For ex, to properly soak raw nuts. Nuts have phytic acid. Phytic acid is also found in grains and legumes. Like nuts, soaking grains and legumes is essential for proper digestions.
    When eating grains and legumes that haven’t been soaked, the phytic acid binds to minerals in the gastrointestinal tract and can not be absorbed in the intestine and too many bound minerals can lead to mineral deficiencies. By soaking, you are breaking down the phytic acid so it can be absorbed correctly for proper digestion.
    I hope this helps and found various readings that explain deeper! Nonetheless, lets enjoy Quinoa!

    Great video and enjoyed it. Fyi, for anyone having issues digesting food. Avoid mixing protein with fruit it won't digest completely. And mixing dairy into the mix is gonna make it even harder for your body to digest. Proteins are best eaten by themselves or with leafy vegetables. Fruit is also best digested by itself or eaten with leafy vegetables or more fruit as long as you don't mix acid or sub-acid fruit with sweet fruits. Peace & Love

    I made Quinoa yesterday. My sister's recipe with BlackBeans, corn, greenBellpepper, jalapeno, onion, cilantro, tomatoes and fresh basil & lime juice served with tortilla chips. Everyone should try it and its DELICIOUS!!!

    I have been loving quinoa for almost 8 years now. I am diabetic and try to avoid carbs. I find that quinoa plays well with everything I have paired it with from cinnamon and oatmeal to taco seasoning.

      @@gioplease6848 no. The saponins can’t “leak” back into the quinoa. It doesn’t work that way.
      The saponins dissolve into the water making the water soapy. The water is then discarded after soaking. Then rinse again until there is no visible soapiness.
      BTW Leaky gut syndrome an creep up on you.

    Soak overnight with some kind of acid. Like veniger or lemon. Juice and a pinch of salt. Wash vigorously the next morning before cooking. I eat it every day.

    I ate quinoa for the first time last week, twice. Last Tuesday, I thought it was because I was on my cycle. But I also made it Saturday and my cycle had stopped. I've been in the bathroom since Saturday evening and all I've ate was quinoa, eggs, and veggies. I wanted to know what is going on. Now I know. I guess I didn't bother to rinse or soak my red quinoa. I definitely will soak overnight the next time! It has however, made my tummy flatter. But goodness...!!

    When you soak quinoa overnight, whaat is the grain to water ratio for cooking? I heard him say add one cup of water, but he didn't say how much quinoa he used. Normally, when I soak for a few hours, I use 2:1 water/quinoa, but I am guessing an overnight soak might require less water.

    I have not have Quinoa in a while, lastnight i had for dinner, my stomach hurts so bad. Diarrhea upon diarrhea. Even my husband having stomach pain. Woke up still feeling sick. I won’t be eating again. Mine was purchased from Trader Joe’s that where i always buy from. Yes i did wash mine. But this is my first time feeling so much pain 😢

    This video is perfect And my favorite recipe is: Quinoa Corn Tomate Onions Black olives Cilantro Olive oil Avocado After cooked quinoa let then stay cool and mix it with tomatoes, onions, cilantro and olives chopped. Add olive oil (as much u like it) and add avocado, corn n salt. Put in the fridge for one hour and voila !!!!

    I Rinse it over and over again then fry it a little in a little olive oil before I cook it like rice. I don’t taste any bitterness afterwards but it still keeps me ‘regular’.

    I ate rice for a long time. I Recently replaced quinoa with rice and I will never go back. I tried having it for breakfast and its great!

    After taking quinoa my face become very very very red and hot ( I have rosacea ). My throat felt uncomfortable too.
    Now I know it's because of quinoa.

      Ricki Hee The red Quinoa is probably more nutritious, but you will need to soak for about a week it’s soo darn hard to cook...

    Thank you, I've been doing this for years with rinsing and soaking. I dont understand how people can not understand the importance of soaking their grains.

      Same thing with nuts and legumes too. They have to be soaked to get the phytates out of them before eating. I buy raw nuts and soak them then put them in the dehydrator. They turn out more crispy that way than either raw or (God forbid!) commercially roasted.

      @@ESAATRAVIESAA - The video suggested soaking quinoa for 2 hours or overnight.
      In addition, I was informed by a "natural foods" person that soaking and rinsing beans - including canned beans! - eliminates the flatulence associated with them, and found it to be the case. For quick and easy preparation, at the very least, the juice which is in the can should not be used, as that is where the majority of flatulence-producing substances will be found. (Being lazy, I tried just not cooking canned beans in their own juice and found that to be true, as well.)

    This is a good tip would be to let the quinoa soak/drain overnight before cooking.. I recommend this technique for most grains (especially rice ) to achieve fluffy results.
