    Watching this as a server I have so much pride watching this dude improve during his day here. Everyone cheering for him when he one hands that tray of fries is so familiar and warming to me. The comradery of the restaurant business is none other like I've experienced elsewhere. Truly a family usually of misfits.

      Yannick Roy i worked at ny. They dont care if you come from a culinary school or IT school they tell you: here. $10 hr job, no overtime, no holiday bonus, no paid leave, sick days only on holidays, charge you for daily meals $4.38, and you gotta attend seminars without pay.
      If you say yes, you wake up one day still working in soho at 55 years old with scarred forearms and a bald head. If you say no, they hire a new guy out of the 50 resumes they get daily and you spend 6 weeks looking for another job that will take you 6 months. I use to work as a cook, by experience i left at 20 years old because its a trap. I am a nurse now making safe money. Good decision in my behalf, because im 24 years old and i just down payment a house. Think for yourself not others. You are in there for the experience not the people or until retirement. Pizza owners makes 80k a year thats good money, an employee make $10, be a leader by using those knowledge, be the pizza owner.

      Oh yeah it's totally overpriced. It's like $20 for a pastrami sandwich...but it's still one of my favorite restaurants in New York. One of those tourist restaurants that's actually good and worth the price. Totally worth it at least once (or more if you're me).

      I only see about 4 places he has worked ..are there more episodes of this ?       who cares about what a stranger thinks of my personality. All the while NY people will have a better work ethic and know what real competition is, handle stress better, all in all better with most factions of business and work. Deal with over 1000 people in 1 day, see how nice a bubbly your personality is at the end of the day. so yea, he's a little to nice, because he's talking to much; talking and being polite while holding up the line for other customers that are waiting. see it from another side. its another form of consideration. honestly ive been around USA a lot and I can say I have "an edge" on people from a professional stance from growing up there.

      @@45Malo I'm not sure you did read it wrong, I think he means 45 people waiting will turn into 60 people waiting if your sitting there trying to be nice to every person. You then end up making more people wait. It's not that they are trying to be rude, they are just trying to keep up with the amount of people they have to deal with. If your in an area with much less people, you can take time and be nice. On the other hand to jack bing, that isn't necessarily a competitive edge, because if you took that attitude to somewhere where the population is smaller and people there expect to have nice things said to them as part of the experience, you will actually hurt business by behaving that way. It is situationally advantageous only. Big cities tend to be like that where businesses have to cater to a large group and have limited time.

    I've intetionally planned long layovers in NYC just to get a pastrami from Katz. Love this place. People complaining about the prices clearly have never been to New York. lol. $20 is nothing in NY. The average price for a cocktail is $15 alone.

      NY prices at many places are insane. For tourists they're insane. For locals they're insane. I live here and people complain about prices (either new fashionable places or high profile long-timer's like Katz') all the time. You know what you're getting into when you walk into Katz' and I've eaten there a bunch of times, but that doesn't make it above criticism. What's really fucking annoying are people NOT from NY who try to let other people what NYers do or do not do. Let me clear it up: NYers love to fucking complain and we complain about prices all the goddamn time.

      Double meat with Cheese, fries and drink ... $17 at Whataburger in Texas. Most of the stores ARE in Texas, over 800 stores.
      $5 million in sales in the DFW airport store.

    There are some delis in NY that taste almost the same, if not better, than Katz. Those places are also much cheaper. This place you are only paying for it being the oldest and most famous deli in NY.

      I'm actually a master butcher and at first glance the price of a Pastrami would seem ridiculous but their sandwich's are actually sold at very near cost, they depend on their sides for profitability. The reason for this is as follows; their pastrami is made out of beef plate, not brisket as many assume, beef plate currently is somewhere near $6 a pound for select. I would guess that they use a higher quality cut then that. Plate is extremely fatty(its actually called belly, or navel in UK, so imagine the amount of fat on bacon. More fat then american bacon because the US generally uses side pork), so after its smoked for 3 days your looking at approximately 1 1/2 pounds for a sandwich serving which is 3/4 of a pound(The rest of the fat renders out). Just a rounded price of $10 worth of meat- their cost, for 1 sandwich. You consider its cured for 3-4 weeks, smoked for 3 days, then boiled in their kitchen, your looking at a month of processing before that sandwich gets served. The cutters are unionized workers with benefits that are paid well too. All this is why their prices are so high, and why they stay open when Jewish deli's are near non-existent anymore.
      Sorry for such a long explanation but I feel its warranted. They are making the majority of their 35% margin(EXTREMELY low margin for a restaurant) from the sides, so that is why fries and a coleslaw is $13, drinks are $2.75 and up.
      Any other Deli would be more expensive, its the volume and return customer ratio that keeps them open.

    Carnegie Deli was a gem too, as well as Katz. Pastrami on rye with gold mustard and pickle with coleslaw is the way to go. Prices are steep but once in a while it's worth it cause no place is like Katz and Carnegie Deli. Native New Yorker speaking.

      Probably not. I highly doubt they had the camera crew active the whole 24 hours. I would imagine they were only filming for a short while every so often.

      Trust me I work in _the field_ as it were, for any legitimate crew the "end user" (audience) will only see at *most* 33% of what is shot as generally 33% is lost immediately for some technical reason or another (bad shots, unsalvageable audio, equipment failure, ex...) and another 33% is lost for time and editing. Sadly a lot of the latter contains the most _real_ moments but are still cut to meet certain 'standards'.
