Five Generations of Making Soy Sauce the Traditional Way
Vložit
- čas přidán 5. 06. 2017
- Japanese shoyu, or soy sauce, was traditionally brewed in vats over two years in a process that dates back to the 7th century. Over the past 60 years, global demand gave way to industrialization, and today less than one percent of shoyu is produced in the old way. But on the island of Shōdoshima, Yasuo Yamamoto ferments soy beans traditionally in bamboo barrels similar to the ones his family has built for the past 150 years. And while it takes four times longer than the modern way to produce, the results are undeniably delicious. Let's have a taste.

I thought the cab driver was the financial owner or something along those lines XD. He's too professional looking.
All cab drivers are very professional in Japan
whitepiano23 I bet he listen to Eurobeat when he work
He's agent 96. Waiting for his opportunity.
That's how taxi drivers dress in japan
I thought the same thing. I expected him to be financial director or sth like that
An important distinction to be made: the barrels are made of cedar, not bamboo. Bamboo 'straps' are used to hold them together. Cedar is wood and is one of the best woods to use for this complex production, just as with any other 'live' food such as wine, authentic balsamic vinegar, vanilla extract, mustard and of course some alcoholic beverages. Bamboo on the other hand is not wood but is a grass, from the large family of evergreen flowering plants. If bamboo were used instead of cedar, nothing would occur like what we see happening in this video.
True...thanks for the explanation
“Oh and that's our cab driver... He drove us here."
I think we all know who the real star of this video is
Soy sauce without the sharp salt taste seems interesting.
- Dread try Yamasa brand low sodium soy sauce. I got hooked on it when I worked in an asian fusion restaurant.
The packets you get with chinese food isn't soy sauce at all, but colored salty water and misc chemicals.
I've tried some expensive soy sauce from Japan. What I can observe is that that they have a more wholesome and highly in depth taste than conventional commercialised soy sauce brands
@@ChefMimsy they distroy the beans with drain cleaner (NaOH) to get out all the flavor and they neutralize the soup with hydrochloric acid (HCl)
NaOH(aq)+ HCl(aq)-----> NaCl + H2O
You get the black soy sauce with NaCl (salt) wich makes the sauce salty.
My family gets the good soy sauce from the asian market in my town.
xXSmokeYou420Xx Does it make you feel better to know animal hair are used in making some of the cheapie soy sauce in China?
by day, he's a soy sauce maker

It’s great to see even in this greedy world , who wants to maximise sales and minimise production costs there are people like Yamamoto san who gives importance to the authencity of soya sauce , and there are many other people/small scale manufacturer who still do that , hats off to all of them :)

Making soy sauce the traditional way for 150 years.
Making sake the traditional way for 400 years.
Pride in work. Joy in work. Soul and heart.
Small, family-owned businesses making things the good old way for centuries.
It's not something you often hear from the US or any other part of the world, except Asian countries.
I mean, considering the US is only about 250 years old they have a bit of an excuse, but I see your point.
Never actually thought about this but so true!
True even in newer countries the old traditional ways are still kept

His kind of soy sauce is the type that doesn't make our gut queasy.
Alex. A. do you mean greasy or is it really queasy?
Why would soy sauce make you queasy anyways?
Queasy because commercial soy sauce, depending on the formulation, can be an acidic or plain salty flavor which doesn't go well with dishes that already have a strong flavor due to the other ingredients.
Imagine having a sensitive stomach, and you're eating a dish that has a soy sauce base for its soup, and the soy sauce formulation ph level is almost or is acidic, queasy is definitely the feeling.
Yeah, makes sense. Generic soy sauce does have a sharp salt flavor most of the time.
I was really just checking to make sure you weren't one of the people trying to claim that "traditional" soy sauce is healthier because it doesn't have gluten or some such nonsense like that, ignoring that it has all of the same general ingredients.
Definitely not my basis for saying it makes the stomach queasy but Gluten Free doesn't help your stomach unless you have celiac disease
I've had the same bottle of soy sauce in my fridge for over 20 years... When I order Chinese food they usually supply me with enough packages for the meal... A few months ago they forgot to include the sauce so I used mine... still tastes fresh/good after 20+ yrs.
Chuck Keough is that really true, or an exaggeration? cause, if true, that'd be amazing. i save all those packets too btw
fermented food are made for preserving
he meant the japanese soy sauce.
+Be Frank soy sauce has such a high sodium content that bacteria can't develop so it never goes bad the same thing for honey and maple syrup but for the sugar content.
That's brilliant 😂😂😭
My favorite videos are always your food videos, it really allows me to appreciate other people's culture

yeah that is *very* cheap for the kind of work that goes into this.. wow I'm impressed!
Well...it's about almost 10 times the price of regular soy sauce if we compare ml to ml. But it's definitely worth a try.
It's up to $70 on Amazon for an 18 oz bottle.

lovely to see people keeping traditions going!
Cool vid. Keep up the work
I bought a bottle of this stuff! It's the same basic flavor as soy sauce, but it has notes of other flavors in it the way a good alcoholic drink does. It's more complex layered. It's easier to notice if you taste it side-by-side with another.
I am happy that they got 1 million subscribers
You did it again Great big story you made me smile!!
How wonderful it would be if, when you produce a video about a company like this, you provide a link to a way for your viewers to purchase their product.
Yasuo in my team : 0/10,
Yasuo in japan: makes traditional soy sauce.
Nice! Kind of a Wes Anderson vibe in this one.
I visited this island for a homestay program in 2014 and got a tour of the facilities. Dont remember if this was also the guy who spoke to us, but I can still remember the smell of the place! The whole island is beautiful!

I bought some of this, along with their ponzu and dashi soy sauce variant, and it is a revelation of flavor. Light years above anything you've had before.
Go out and buy some right now. Its $20 a bottle, but 100% worth every penny.
Thank you for your great recipe, I will be making this and uploading a video in 2 years in my cooking channel, my kids love soy sauce. So i'm sure this will be a great and long stuff to make.

I can't wait to taste this 😍
Fermentation and flavoring via container is also the trick used to turn traditional moonshine or "white lightning", ie corn based alcohol, into bourbon! It's very specific to the cask you use, how it's charred and making sure it spends ten years getting that perfect color!
Anyone know where to buy some? I gotta try it.

This is the Asian equivalent of gourmet balsamic vinegar.
The fermented soy sauce is good to health BUT in nowdays almost all soy sauce outside Japan is not fermented , it is just Saturated vegetable fat heated and is Carcinogenic.
Our boi the cab driver did alot of help in making this into a great video
congrats on 1million

How do i buy Mr. Yamamoto's soy sauce? you guys should post links in the description when you feature artisans like this so that fans of your work can support them.
Yamamoto?! I knew the admiral wasnt dead

Darko Nikolic Yamamoto is a pretty common name in Japan
LoL players when hearing the yasuo name*
LoL Players: Ohhhhh
I bought it off of Amazon-let me tell you, it’s worth every penny. Thick, rich, savory, leaving a subtle sweet taste behind. I will never go back to Kikkoman overly processed/bitter chemicalatasting soy sauce. Soy sauce is a staple in my culture! I never want to go back! I’m serious.
Ur vedios are so interesting and knowledgeable i cant stop watching them while i should study for my paper

After watching this video, I ordered this family's soy sauce online from a Japanese company called Japanese Taste. I have no idea as to what to expect, but I love to support a small family business that makes a product the old-fashioned way. Can't wait to try it!
So how did it taste?
I might buy some. Bet its amazingly delicious
it looks like shit fermenting.
better than your heinz sauces
Anthony Marquez you should take a look at how Worcestershire sauce is made
I saw how Worcestershire sauce is made and it is gross.
Heinz isn't my kind of sauces I prefer traditional Italian or Hispanic sauces to cook with.
Yasuo, guchi, yoshi what teh fuck
I really want to buy some now
this video really makes me cry
I wanna try it
You got me there at your caddie!!!!! I thought he was your tour guide!
It is traditional manufacturing process like these that makes food so valuable and tastier. I love the Japanese traditions. They are really healthier. I wished I could only eat fresh, traditional, artisan and organic foods.
These people are important all around the world. Holding on to tradition like this is of such value.
Why so people think tradition is so important
Because it's a living piece of history.
