It's just about respecting the food. We don't want to waste eatable parts. If you came from poverty or postwar countries, you will understand that. Same for Japanese, they have recipes for fish intestines no matter the size of the fish. The most famous would be fish testicle. But most customers came out overwhelmed by its taste. Bad chief can make the best ingredients taste nasty af. If the food ingredients are scientifically proved to be non-toxic, it only depend on your cooking skills and whether you are used to it or not.

In most of the restaurant I've been in the west, wasting food would lead you to a direct confrontation against the chief. Unless you give him a valid point for your action, you will be treated really badly and even lifetime banned from entering the restaurant. So on this point, I think the east and the west share the same opinions. You can have a very specific personal preference of food. But it doesn't bother others to enjoy the food.

I used to live in China. Don't really care for chicken feet or chicken heads. I completely understand the culture behind it though. One day I went to a chain restaurant that served small snacks and 滷味 and I asked for two duck legs 鴨腿 but at that point my Chinese was super bad so he Heard 鴨頭 (duck head) so I just sucked it up and ate the duck heads.
The chain restaurant was called 沙縣小吃
