    When we first got married (almost 47 years ago) I wasn't much of a cook. My mother was a good cook of basic things, and like you, seldom used a recipe. But I didn't care much for cooking, and she didn't make me. I've often said that I learned how to cook from my mother-in-law, and learned how to use a hammer frim my mother! Lol. I created my own "cook book" of how to and called it, "You Don't Have To Be a Good Cook, to Cook Good Food". Now after 47 years, I'm a pretty good cook 😊
    We just this year grew purple eye peas. Loved them!

    for sure scott i agree flavor profile and adjust from there..well done.the way you made your beans is the same way my wife does her Brazilian beans but she uses pigs feet and pigs ears..

    Plus the black eyed pea or purple hull grow at the top of the plant - makes them easy to pick.

    All the way in FL and I can literally taste and smell this video! I grew up cooking by spirit and taste in my grandmother and great grandmother’s kitchen. I only have recipes for cakes/canning that require specific measurements.

    Thanks to your channel, I discovered my love of cowpeas! They aren't typically eaten here in Northern CA, but they grow so well in the extreme heat of summer. I grew 6 varieties this past year, and got a great harvest from almost every type.

    Those beans look yummy. I'm waiting to buy my new freezer then I can order a ham and make dried green pea and ham soup. My neighbour (who also lives alone) loves my pea soup, I always give him some.

    Thank you for sharing how you prepare these! I know you have said they grow well during the hottest part of Texas summer but I wasn’t sure how to eat them. I will give them a try next year!

    Classically southern!
    I grew Chinese Red Noodle Beans this year and didn't get to some in time. I was told to dry them all the way and use them like black eyed peas. Haven't tried it yet but should be interesting.

    They taste great fresh or dried and are easy to grow. I heard the leaves are edible too. I just bought some Mississippi pink eye purple hull seeds to plant next year. I`ve planted the dry ones from the store before too. I usually just chop up some bacon, add some onion and garlic and sometimes add whole okra and eat with cornbread. I like them so much that I`ve put them on a fold over sandwich. We grew hundreds of pounds of these when I was young to put in the freezers. We ate them daily.

      Do you have a favorite variety? I personally like just about all of them but don't really care for the Black Eyed pea.

      @@ScottHead We grew purple hulls mostly but I remember some other kinds that had a more butterbean flavor. I prefer them fresh but have problems with my hands from playing drums and commercial fishing for decades and a car accident and they`re painful for me to shell in large amounts. I`m trying to find a sheller that works.
      I`m moving soon and my whole yard will be a garden so I plan to try various types of new beans and vegetables. We grew a huge variety but I`ve seen things I`ve never heard of on the internet. I`m gonna try to grow as much of my own food as possible and catch fish in the creek for protein. I`m on a very small fixed income and can no longer afford to buy enough food at the store.
      I will likely grow as much higher calorie things like beans and potatoes as possible, and turnips, beets, collards, peas, pole beans, fruit, and varieties of greens, onions, and garlic. There are a lot of blackberries in the area in a large field nearby. I`ll probably be stuck with no transportation in the future anyway and there`s no grocery delivery here from stores because I`m in a very rural area. I`ll have to order whatever I can online like rice. We have mild Winters here and I can grow certain things that survive freezes and bugs won`t be a problem during a few months of the year.

      @@ScottHead Love Black Eyed peas! Cook them with a chunk of hog jowl or fat back and serve them with fresh chopped white or yellow onion.

    Just pressure canned 9 pints of red cow peas today. We usually use pink eye purple hull but got a big bag of these on vacation awhile back. Wonder if this recipe would work for the red ones? If not, any suggestions? Those look yum! Your son is very handsome. Kind eyes. He reminds me a lot of my son. Guess that’s why I liked him. 👩‍🌾👍💙

      Should work fine. My son, glad you see the kindness in his eyes. He is a tender heart and mighty man of action. He's adopted two foster care boys and saved three stray dogs. A heart of gold for sure. I am blessed.

    Growing some this yr but not all beds r ready for picking so doing small cooking to see what spices we like with them eating fresh till iam overun by them and let the dry on vine or so

    Yummo…..Mississippi country here😃 do y’all not eat them fresh or put them up fresh in Texas? Only time I fix them dry is for New Year’s Day in Hoppin’ John. Fix ya some cornpone too. If you pre-soak them ….less of a cookin time or try a insta pot/pressure cooker. Happy Thanksgiving 🍁🦃🍽 y’all

      I'll eat them fresh if I have a large plot of them. But this year I just had a 4x4 plot, so they couldn't produce enough fresh to have a mess of peas. Had to save them up over time.

    I grew purple Hull pink eye fir the first time this year, picked them just when they turned purple, and froze in freezer bags. Hope they will be ok, so maybe will try dry beans next time. Leave them on vine longer and on counter longer to dry out I’m guessing..and can also replant from that stock too?

      If they are dry and not frozen then yes, they last years.

    I wonder how Banbara nuts would do in your soil.( Vigna subterranea). We grew them in South Africa. They crop much the same as peanuts. I would be interested in your thoughts. They would certainly break up that gumbo

    Do you let the beans dry on the vine or pick them and dry them after?

      I pick them when the shells begin to get leathery and dry them indoors in regular air temps. You can shell them when not fully dry as well and leave the peas on a flat surface to air dry. If you pile them too deep, say in a bowl, they can grow mold.

    Mine did so well this past season, unfortunately I worked so much overtime, it rained so much and was so hot I didn't get out to the garden very often and lost them all.
