  • Hong Kong Eats talks to a local chef who has been preparing dim sum since he was 15. Chef Tang Leung Hung demonstrates how to make the perfect char siu bau (barbecued pork buns) and har gau (prawn dumplings).

    i love love love har gau(shrimp dumplings), siew mai(pork dumplings) and fong zau(chicken feet)! a dim sum meal isn't complete without them...yummy!

    Yes, For me the hongkong-chinese are are friendly, they are cruder in the PRC although there are exceptions of course, im not chinese so I do not know what they say behind my back but I prefer HK to Canton..yes

    I want to know how he makes char siew bao EXACTLY like those ones at time 2 mins 10 seconds into this video. I believe that the texture of those ones depend a lot on the kind of flour used - not just on how the dough is prepared.

    Pork oil, which is pretty much Pork lard =P
    And of course you have to measure the ingredients, like in all cooking. Too much flour makes can make it crumbly.

    My recipe is as follows:
    1. Go to Flushing, Queens, NY
    2. Have my girlfriend say "har gau" to the lady with har gau in her cart.
    It's easy when you know how!

    @ChipProcessor32 The do tasty dimsum in Guanzhou..but the resturant-atmosphere is rude and rowdy,compared to Hongkong. Sorry but Im a gweilo who don t speak cantonese but I love dim sum and Hongkong..and the friendly,charming Hongkong-chinese.

    LOL..chinese in the west are more polite and discreet than westerners are in Asia.
    I love strolling trhrough San Francisco s China town on early mornings and afternoon,dimsum-time.
    What I do n t like are the China towns in for example Jakarta,Saigon(HCM) and Kuala Lumpur..they are just awful places,dirty,overpopulated and smelly
    but sometimes in the middle you find the most beautiful, old chinese temple with old buddha statues...and then we have the demolished chinatown like in Singapore.

    Don t take me wrong, Im a great admirer of chinese art,food and culture but as most gweilos not speaking mandarin/cantonese and being both clumsy and ugly as westerners usually are when coming in contact with other cultures mayby I missundestand the chinese sometimes.
    Ive only been in Beijing and Guangzhou so I can not say that Im a great expert on the PRC...although been several times to Hongkong,Taipei and Singapore which before where different from the PRC but now more and more alike.

    I am also a chinese. And didn't u read the title ? Dim Sum : a cantonese tradition.Cantonese..... not shanghainese dish. Xiao Long Bao is a shanghainese dish get your facts right and read the video headline title.

    Well this video is about Hong Kong.... seriously! and Xiao Long Bao will always be a shanghainese dish.Xiao Long Bao is just a 'dumpling' and that's the reason is still called dim sum, get the headings right " A Cantonese tradition and xiao long bao is not a cantonese tradition.

    @why123 Is not the title the origin of Xiao Long Bao , I am just emphasizing on Xiao Long Bao .... itself that the origin come from Shangai and is Shanghainese dish.
